以前在學校教的洗麵後,熱油捏一小球下鍋炸成麵T(麵筋球)
這個下鍋用熱油炸也能成麵筋球
但我想做少油版
所以改用氣炸鍋
视频很不错啊,20年前我还拜师学过做面筋,那时候商用量大,都是用洗衣机洗面的,面筋都是用很狂野的大锅快速大火蒸开的,不然根本发不了泡
量大火力要加強,否則熱力觸不到內部氣孔沒法張開
家庭版因為量小,火力就不能太猛
否則膨脹過頭冷卻便塌下來

Everytime I steamed the seitan they puff up a lot, but after I turned off the stove they will shrink in the middle 😢. I can never achieve what you did , beautifully filled up the container 😅

真正江浙人的烤麩從來𣎴是用切的方塊,而是手撕的不定形塊狀。我有一次送了一盤母親教過自家做的烤麩,冬筍,磨菇,毛豆給一位九十歲來自寧波的老人,他看了說 「這才真是我們老家的手藝 」,烤麩是不切塊的!因為廚子不用手撕,分不出那是油炸麵泡,還是真正的烤麩!
