if you set restrictions and limits to your magic system you can´t ignore them whenever it´s convenient to the story

and yet out of nowhere he can just imagine SOMETHING he calls his sun and it gives him power, yup makes perfect sense

None of the sins knew that Escanor possessed a Grace until the Archangels came in, so they just based that knowledge on its natural properties without knowing what it's capable of and therefore their version of it was "only when the sun comes out".
However, like I stated before, his true power could always have worked even at night, but because there was no catalyst (until now) it never shown. In Mael's case, he can harness the ability to it's true potential, and can therefore also use it at night. Now, what's inconsistent about that?
