IN MY OPINIÓN & experience, a boat will go as fast as possible upwind only when there is a balance between the DRAG & LIFT pressure: in the sails, in the rudder, & in the keel. So, racing, there is a constant need to be trimming: the main & or the traveler in the puffs, the Cunningham, the weight (hiking) location inside of the boat & steering the boat with the least amount of interference while maintaining the heading or direction upwind. Every boat is different.
