I think the stunt doubles should get more appreciation, publicity and better pay. These breathtaking scenes would not be possible without them. By the way, Daniel Crag is the best Bond in my opinion. The guy can act.

Every single car chase or stunt scene involving vehicles is usually done at around 20-30mph becase that’s the fastest you can “safely” perform vehicular stunts with the smallest risk of someone dying.
I think it's mostly clever cinematography. Like if a camera's panning to the right as a car drives to the left it will look faster along with quick cuts etc.

For the action driving in-car shots there`s an external driver driving the car. He sits on the roof in a cage where he has steering wheel, pedals etc as in a normal car. Stuntdriver + Cage easily equals 150kgs of weight on the roof so the center of gravity gets dangerously high. Therefore the car is specially prepared with stiffer chassis suspension springs, a wider stance (wheels sit more outside the car) and finally: small diameter wheels with wide tires with small height flanks bring the car as close as possible to ground for maximum riding stability. Similar rules apply for the pickup with the camera boom crane. This one has bigger balloony tires tho probably for uneven terrain and making the image less shaky…

Usually they put a second layer on top. For instance they copy an ancient tiled roof and put a fake roof made out of wooden structure and plaster, then patinaed, on top. So they got the look but original substance isn´t destroyed. The whole Skyfall house was rebuilt for the explosion. The Aston Martin DB5 was recreated as a lifesize 3D print to blow it up. Still damage might have occured, of that I am not sure.
That's why the Bond movies look so amazing. Because everything is real. That's probably also why Craig's acting is so on point and believable.
