  • Belize is a pristine tropical paradise known for its exceptional diving, fantastic fishing, and diverse cultural heritage. While the country is not famous for its cuisine, the culinary scene on Ambergris Caye and neighboring Caye Caulker is rapidly evolving. Traditional Belizean food typically reflects a blend of Spanish, Mayan, Mexican, Creole, and Caribbean style cooking, but in the past few years, a growing influence of Japanese, French, Indian, and Hawaiian chefs have left their mark.
Earlier this month, the executive staff of The Phoenix Resort invited a master Thai chef to prepare a special two-day dining experience for esteemed guests. I had the privilege of joining Chef Lek, the owner of Em On's Thai Cafe in Naples, FL as she procured ingredients and took over the kitchen of Red Ginger (the Phoenix Resort's distinctive restaurant) to create a variety of Thai specialties.
In this video, join me as we go shopping at organic produce markets around the island, then proceed directly into the kitchen with Chef Lek as she creates enticing entrees such as Massaman Curry, Thai Basil Chicken, Pad Thai, Cinnamon Pork Belly, and several other outrageously delicious Thai classics.
If you've ever been curious about how to make Thai fried rice, pad thai with chicken, massaman curry, or tom yong goong - this is your chance to discover the recipes and cooking process in a first person style tutorial. Feel free to skip ahead to these parts of the video to learn how to make each dish:
How to Make Thai Fried Rice: 35:53
How to Make Chicken Pad Thai: 55:40
How to Make Thai Basil Stir Fry Chicken: 45:19
How to Make Massaman Curry: 24:25
How to Make Thai Cinnamon Pork Belly: 29:58
The Red Ginger is one of the best restaurants on Ambergris Caye. The kitchen staff prepares an exceptional variety of local Belizean cuisine and creative seafood entrees that are sure to delight nearly any palette. Working and filming in the kitchen alongside the talented staff of Red Ginger was a humbling experience - this team works hard to provide guests of The Phoenix with exceptional food.
If you happen to find yourself in Naples, FL - be sure to visit Chef Lek's "Em On's Thai Cafe", which you can learn more about, at the link below:

if you enjoyed this video, please leave a comment or a thumbs up! If this video performs well, I will proceed to create a "day 2" version of this video, which includes additional recipes for Thai dishes such as Pad See Ew, Penang Curry, and Thai Style Fried Fish.
If you've been wondering how to make Thai food, this video is an opportunity to follow along with a master Thai chef - every step of the way. Most of the ingredients you need to make Thai food are available at your local well stocked grocery store...and you're guaranteed to find everything you need at a local Chinese, Korean, or Japanese market. I've been a huge fan of Thai cuisine my entire life, and I've always wondered about the nuances and process of how to make Thai food. Spending two days in the kitchen with Lek was a humbling and inspiring experience...and it certainly taught me a few tricks about how to make Thai food that is sure to impress any crowd.

What a great opportunity and experience. Love Thai food. I've said it before but I really love and appreciate your descriptions. Most don't even bother - it's all about their sponsors, so thank you. 👏❤️

My man! You are certainly no stranger to the allure of thai cuisine. I spent a good bit of time in Bangkok and Chiang Mai - wandering markets and sampling as much as I could. I've enjoyed a variety of duck noodle soups through the years - and i couldn't' agree more - something about the balance of the duck meat with thai aromatics is truly spectacular. I appreciate you watching the videos! thank you!

Thank you! This was certainly a longer cut. Apparently - longer TH-cam videos perform better than short episodes, so I thought i'd give it a try. In the description I put a few links to the actual cooking process for each recipe - hopefully that makes it easier to navigate!

Impressive Charlie! I watched this video non stop. Em On's Thai Cafe in Naples, Florida has truly piqued my interest-I'm now craving a visit. I'm even planning to enhance the experience by bringing some Ka Prow (Thai Holy Basil) from my garden, boasting four delightful varieties. My personal favorite is the one with leaves and stems that take on a subtle purple hue in colder weather, accompanied by light lavender-colored flowers. Although I currently enjoy the best Thai food at Siam in Glendale, Arizona, situated on Northern, this video has left me eagerly anticipating my next meal. Your entertaining presentation has not only fueled my hunger but also sparked a desire to see more. I'm captivated by your style and enthusiasm, and I can't help but suggest the idea of you collaborating with Lek to create a delightful TH-cam Thai cooking channel.

Thank you so much for taking the time to watch this episode! I'm very grateful for your feedback and perspective - i've been striving to create a video format that inspires travel and culinary expeditions. I will be visiting Lek in the near future to film a video at her restaurant in Naples, FL - she has an amazing life story that is captivating and intriguing.
I have to agree - Thai basil is one of the most fragrant and magnificently satisfying aromatics you can grow. What an exceptional addition to a dynamic garden. Do you cook with Thai basil regularly? Have you tried adding it to Prik Nam Pla (spicy sauce) in addition to fresh cilantro? You've got me curious about blending basil with fish sauce, garlic, and cilantro root.

Great video, I really like your descriptions of the flavors. Making Thai food with items only available on an Island in Latin America is not an easy task. Great work with the filming and editing of your video, I will be watching and subscribing to your video's. Thank You

Thank you so much for checking out this video and exploring my channel. I hope this cooking video inspires you to try some of these Thai specialties for yourself. Filming in a busy kitchen is no easy task - my respect for Anthony Bourdain and his film crew increased exponentially while I was making this.

😅😂🤣We lived in the southern most town in Belize for two years. Make do with what you can get is not just an island thing, it's a Belize thing. Milk came to the Chicken store on Wed. night and if you didn't purchase your milk by Friday mid day you were going to go without until the next week. All of the meat was frozen except for the fish we caught our bought. Yep,, even the hotdogs were frozen.

You nailed it! Get it while you can, when you can...otherwise...it could be a week or more until the supply arrives. I was impressed with the produce markets on the southern end of Ambergris - they were consistently well stocked with produce grown on the mainland. Actually more impressive than the mennonite market (at least when I was there).
