Yes baby, its called "carmelization" basically; melted, concentrated, meat candy. And... Yes, you are also correct, good Texas bbq doesn't need sauce. If the meats sooo dry that you need sauce...you went to the wrong place. Sauce on the side, its a condiment, not an ingredient. If you are enjoying the meal, get that heavy rich smoke flavor that covers your entire taste mouth, and gives you a bitter after taste... that's too much mesquite wood smoke. Try some; post oak, pecan, or hickory woods for smoking. Those woods have a lighter, more distinct mellow flavor that they give the meat. Remember, Mesquite trees are range trees. Their flavor is tough and bitter, just like the environment they're grown in. They're used traditionally in Texas bbq cause that's what was cheapest, and most abundant. Now days however, using lighter, more vanilla or sweet flavored woods give you a milder bite to the meat, without sacrificing, flavor, juciness, cook-time, or traditional tastes. I've tended many outdoors pits with mesquite wood burning...I ended up smelling more like the meat than the actual brisket did. Take a look at the videos by "Cowboy Kent Rollins" on TH-cam. He's an Okie, but he also does great brisket and ribs too. He's also got a great presentation, and is a patient educator.
