Lao Banana Sticky Rice Dessert Recipe
Ingredients:
2 cups glutinous rice
4 ripe bananas (preferably sticky or Thai bananas)
1 cup coconut milk
1/2 cup sugar
1/2 teaspoon salt
Banana leaves for wrapping (optional)
Instructions:
Rinse and Soak the Rice:
Rinse the glutinous rice under cold water until the water runs clear.
Soak the rice in water for at least 4 hours or overnight.
Prepare the Banana Leaves (if using):
Cut banana leaves into squares, and quickly pass them over an open flame to make them pliable.
Steam the Rice:
Drain the soaked rice and place it in a steamer lined with cheesecloth or muslin.
Steam the rice over high heat for about 20-25 minutes or until tender.
Prepare the Banana Filling:
Peel and slice the bananas into thin rounds.
Make Coconut Sauce:
In a saucepan, heat coconut milk over medium heat.
Add sugar and salt, stirring until dissolved. Remove from heat.
Mix Rice and Coconut Sauce:
Transfer the steamed rice to a large bowl.
Pour the coconut sauce over the rice and gently mix until well combined.
Assemble the Dessert:
If using banana leaves, place a spoonful of the coconut rice mixture onto the center of each leaf.
Add banana slices on top and cover with more rice mixture.
Wrap and Steam (if using banana leaves):
Fold the banana leaves to form a neat packet.
Steam the wrapped banana sticky rice for an additional 15-20 minutes to infuse flavors.
Serve:
Unwrap the banana sticky rice or simply scoop it into bowls.
Drizzle with additional coconut milk if desired.
Garnish (Optional):
Garnish with sesame seeds, or a sprinkle of shredded coconut for extra texture.

Hello, I have a question for you. One of my friends I grew up with was from Laos, and his family lives in America. I would eat at his families dinner party's and there was some dips that they had that I can never find what they were. One was like a dark green sauce that they said was made from the juices of cattle dung. I can't seem to find anywhere what this would be called. We would dip our sticky rice in it. There was another sauce that had a lighter colour to it, both tasted similar but different.
Hello @norfboy, I think you meant to say gallbladder holds a digestive fluid called bile from the cow. Not all Lao people eat this, but most of them like to eat it.
