Afaik, prey kicks people off dependent on when the first person bites-- so if several people bite near the end, everyone gets kicked off very quickly and takes a lot of damage. Especially with bison-- they kick you off very fast and deal a high amount of damage. So, taking turns ideally lets you avoid that.
