He represents the ultra-militaristic side of the Republic and is the ideal person to create Palpatine's vision of the Empire. Tarkin believes the military should have significant influence and be led by one strong leader. Additionally, he despises the Jedi, seeing their hypocrisy, and hates the Separatists, viewing them as traitors and rebels that need to be eradicated. (It's important to note that people like Tarkin will rise through the ranks very quickly.) What is this important information? Practically, it holds little significance, especially for the Jedi. It's the hyperspace route from Coruscant to the Outer Rim. This route will be used by the Separatists to attack Coruscant in Revenge of the Sith. The events of these episodes are minor because, regardless of the circumstances, the Separatists will obtain this information in every possible scenario, so Dooku's presence was unnecessary. Regarding the Citadel: After the Separatists seceded from the Republic, they quickly occupied this planet because it was nearby. The Outer Rim is essentially Separatist territory, and the Citadel is located there. As for Jedi who switched sides, there are many. Some will be trained by Dooku, while others will be used as cannon fodder.
