That 190 is for performance Ike your gonna have to run the factory thermostat to keep her cool also remember it's 100 degrees on the coast now so when u sitting in traffic that heat gonna build quickly.

Brian, Just a suggestion. I've seen this issue before it happened on my vehicle. Try replacing the engine coolant temperature sensor. This is a known issue on Chevy's and / or Chevy engines from time to time. A/C Delco makes the part you can get it from Amazon or your job!
Put a 160 thermostat put a pushers fan wired to come on with ac activate fan 1 at 160 fan 2 at 180 big cam engines don’t like ac also if the Dakota digital is reading of the sensor it’s going to read hot use the bim module if you not already using it
If you got rca Jack's hook up on the radio that's radio feed jack your hearing they probably bad but if they not hook up check your radio wires you got something in there giving you feed back through the speakers
That noise you hear through the speakers and stuff whoever hooked the system up they got the wires it's the wires in the system I promise you that when I was late coming up that's what we used to hear in in in the system but it's the one of the whoever hooked the system up
Thats a ground noise you hearing while you driving. Your power wire and RCA's could be too close together. Try running 1 on the opposite side of the car if they run on the same side together.
Check your grounds to get rid of that noise

Could it be the radiator maybe with the bigger engine and transmission it's not big enough to keep everything cool, with the ac running.

That LS3 maybe shooting off more heat.
Let us know what you do to keep that temperature low.
Ground wire or bad rca's and also if you have a battery in the trunk check connections and make sure it's charging

they run between 195 and 220 normally

Have you ever thought about using resonators on the exhaust to cut down the noise
