The first thing that you need to do, is to find a good sommelier. The person whose going to look after the wine list must have a basic excel skills and understanding the differences between margin and markup. The crucial decision is to find knowable and good wine supplier, someone whose will be able to build your wine list and recommend the right wines for your list but also someone that you can trust in term of deliveries.
