i believe you can have both movesets at the same time if you change all the sovereign moves to a holdable move (ones with a + symbol)
The sov moves dont show up in the binding list
I did that and it worked but then when I got master 7 it doesn't work anymore

yes for example. If you have 20 special stats you get 10 extra health stats meaning thats 50 extra health on umbra

Beating the soverein boss gives you 25-50 points of mastery. But you have to get mastery 1 first by completing the umbra optainement quest
