Nice, thanks for sharing. What kind of probe are you using for monitoring humidity?

I use industry LoRaWAN probes from Dragino. The model is LHT65. The advantage is that the system is extremely scalable. It is easily possible to monitor hundreds of humidors and storage containers, locations, etc. simultaneously.
