      I'm 33 & grew up watching good eats! I remember the highlight of the teen years was getting my own combo tv/vcr so I could watch MTV & food network. To this day watching Alton feels like pure nostalgia

    I'm 66 years old and learned my cooking basics from Jeff Smith, the Frugal Gourmet. I caught some of Alton Brown's TV shows and really liked the content and production quality but don't watch TV much. I stumbled on these quarantine videos and am really excited to watch them!

    I'm so pumped that I found this channel! I am such a HUGE Good Eats fan and have been since it was a new show. This is similar but different in a good way! I have new things to watch for atleast a week 😆 Alton Brown is the man, I still quote him on almost a daily basis at my restaurant job!

    Only thing I liked was he pointed out that celery extract was like using the sources of MSG to add free glutamates without having to call it MSG. Otherwise, waste of parchment paper when that rack is by far the most difficult thing to clean anyway.

    I had a friend back in the day who was thoroughly allergic to the added curing nitrites in bacon, but she could eat the uncured bacon just fine. Allergies are a finicky beast!

    I watched one of your videos the other day where you mentioned that you don't like the idea of Good Eats being something only kids watch. As someone who did watch you as a kid, you should understand that you're an inspiration. I live in a rural area and many people here are set in their ways and are unwilling to learn, so when I found your show I was thrilled. I was a fan then and am still a fan.

    I made this, tho I didn't have Muskavado Brown sugar, just plain dark brown, and let me tell you how well it paired with Bourbon. I might have hit mine a little hard with the red pepper flakes and pepper, but I like the spicy heat. What a paring. Thanks Alton.

    You could melt down the sugar to a syrup, or just use a good maple syrup, throw in the spices and then turn the bacon in it until completely and evenly covered and then bake it .... you might also want to try and add some lime juice and shredded lime peel as well. It's actually insane how good that is, I have done it with chunks of bacon, sugar and chili in a pan ...

    First time I had it was on my honeymoon up to Napa (2016). We left San Francisco early and drove to FRED'S Place for breakfast in Sausalito. Their Millionaire Bacon has completely ruined me, but my wife and I make it whenever we get a chance. Thanks for this refined recipe, as other online recipes for this are fairly pedestrian.

    I just made it for breakfast. Delicious. I ate it with ice cream bread that I just made and an egg bite. A word of caution: Do not let the bacon sit on the rack too long. It will stick to the rack. Remove the bacon immediately when it comes out of the oven. Thank you for the recipe.

    I've never heard of "uncured bacon" before, and I'm really puzzled by it. I mean ... I'd say bacon is cured meat, pretty much by definition. So if it isn't cured, how can it be bacon?

      Former butcher here - technically speaking the USDA has defined any "cured" product as nitrates and/or nitrites during the pre-smoking/cooking or preservation process. I worked at an all-natural grocery store (you know the one) and all of our smoked meats (ham, bacon, sausage, hot dogs) were labeled "uncured" because they technically went through a curing process but were nitrite and nitrate free.

    As for me..... I don't use chili flake, I use Himalayan pink salt, black and white pepper, and if I can get it, red peppercorns or Szechuan peppercorns. I know AB, I know... You and Major Pepper cleared up the whole thing about it not being real pepper but it tastes good and I like it in place of chili flake. 😋😁

    Try dredging your bacon in a ~2:1 mix of cocoa powder and cayenne pepper. So tasty and keto friendly.

    I am going to try it substituting dark brown sugar with a bit of molasses added for the muscovado sugar. I think I will call my substitute 'Muscovido Sugar".

    I use cinnamons, brown sugar & cracked pepper, or bourbon, crushed pecans & maple syrup. All calories fall out of it once you pick it up to eat.

    Candied bacon is to DIE for. So tasty, and yet so bad for you. Probably why i like it so much!
    Never had it with the pepper flakes, but that would probably add to the flavor a bit. I would not use as much as Alton did, but a little would not hurt.
