Best Pork Pot Roast | Baked Potato | No Coffee Needed Style | Melts in your Mouth

  • This Pork Pot Roast is Simple and My favorite roast of all times. This is also cooked with baked potato all on the #pitboss.
    8-9 lb Boston Butt
    SPG seasonin
    1/2 cup chicken stock
    1 packet pork gravy mix
    1 packet onion soup mix
    Butter
    Green Onions
    Whole Pepperoncini Peppers
    4 Large Potatoes for baking
    Course Kosher Salt
    More Butter
    Coat Boston Butt with SPG. Place on smoker fat side down for 2-2.5 hours at 270 degrees. Once it is golden in color, bring inside. In cast iron pot, pour in chicken stock and place green onion on bottom. Place pork fat side down on top of onions, sprinkle gravy and soup mix on top of pork, place pats of butter on top of pork, (1/2 stick). Then place as many peppers as you want on top of pork and in pot. Cover with lid.
    Punch holes in potatoes with fork or knife. Coat well with kosher salt. Place on tin foil, then place 2 pats of butter on each potato. Wrap each potato individually with tin foil tightly.
    Place cast iron pot and potatoes on smoker for 3-3.5 hours at 270 degrees or until potatoes are at desired tenderness and pork is 205 degrees. Keep covered and let pork rest for 20 minutes. Pull pork into shreds, cut potato open and place pork inside of potato and enjoy!!
