Actually You can chain Gaia Knights of dragons effect to de-fusion.
Also I recommend you to use spiral strike x2, ando try to get de-fusion during a battle phase when You atack with two spiral strike activated

When you sacrifice escape gaia the magical knight with de fusion, you need to first activate de fusion and then use gaia's effect to pop up the card normally otherwise you cannot lower your attack and miss the effect....

no, you can't. de-fusion only summon fusion materal monsters that after being sent to the grave.
