Sodium Nitrate is what cures the meat in Celery Juice Powder. No matter what you use other than just plain salt, be it Cure #1 or Celery Juice Powder, the active ingredient is Sodium Nitrate.

Hey Guys. Thanks for the video. I dry cure a lot of boneless Tamworth hams from our Farm. For larger pieces, I use #2 cure to keep the nitrites from fizzling out before it reaches the center. Do you have any advice on dry curing, as I really think it a richer flavor in the end product. We loose about 35 percent water weight in ours. Also, did you just brine that ham overnight, no longer?
What specifically would you be looking for advice on with the dry curing? We do not do a lot of dry curing ourselves but we do have some people here who are reasonably knowledgeable on the subject. I will send you a message through meatgistics.com to get some more details.
