Eren and Reiner look their age, they just don’t take care of the hair on their faces/heads. Levi on the other hand looks a little older than he did in season 1 but yeah he just ages well and shaves. Makes sense he wouldn’t have facial hair since he’s such a neat freak.
I mean Guts case is understandable the guy's had a life of battle, wounds and constant massively taxing physical activity since a really young age and that takes a massive toll on your body, including his patch of white hair which was caused because of massive stress, that can actually happen in real life.
