  • Pineapple have enzymes that cut down proteins, they are called Bromelain. It is known that you can tenderize meat with this enzyme. Today I am pushing the limit to find out how much is too much. This experiment is for 4 steaks cut out of the same loin. They all have been exposed to the pineapple for 1hr, 6hrs, 16hrs and 24hrs. How much is too much?

    Pineapple works a little like stomach enzymes, meaning the over-marinated steaks are partially digested. They taste like sh!t because they actually are sh!t.

    Funny thing, I watched your video on marinating a cheap steak (eye of round?) in blended pineapple the other day and figured I'd give it a shot. Put the steak marinating in the fridge with the intention of leaving it for a few hours - we ended up getting pizza that night and I forgot about it. 24ish hours later, I cooked it for lunch and yeah. Cat food.

      Salt, pepper, garlic works but making a compound butter or sauce with additional herbs or veggies like mushroom, onion (sauteed or fried) takes things to a whole other level. Try chimichurri butter with cajun onion rings.

    ite so everyone wishing to be able to make good steaks i gotchu
    step one take steaks out the fridge 30 minutes before cooking h
    2. heat pan on med-high with oil
    3. season steaks generously wit salt and pepper
    4. when pan starts smoking place steaks and lay away from u on the pan to prevent oil splashin
    5. flip after one minute
    6.add generous amount of unsalted butter, thyme and 3 cloves of garlic (this is what completely elevates the flavor )
    7. baste with spoon ( a lot )
    8. sear off sides especially if there is fat in the sides
    9. keep turing every minute or so until steak feels tender yet bounces back when u touch (for mid-rare)
    10. lets rest 5-10 minutes depending on the thickness and of your steak.
    11. enjoy your restaurant quality steak
    i’m not a chef but i take cooking as an extreme hobby and i’ve spent the past year learning to master a perfect steak of any cut

    You should try this experiment again with a much tougher cut like brisket. It should hold up better and you might find the key to quick cooking brisket.

    Tried this just now. We ate the pineapple so i used mostly skin with a bit of the fruit still on it. Blended with extra water as it was a bit too thick. Had kind of thin steaks and marinated for an hour. Turned out great! Definitely gonna be trying this again!

    Pineapple juice is the key ingredient in Houston’s/Hillstone’s Hawaiian Ribeye recipe. Also use: soy sauce, apple cider vinegar, sesame oil, chopped white onion, sugar, and diced fresh ginger. Marinade for at least 24 hours, preferably 48. Best steak ever.

    I have a weird obsession with trying to make Eye of Round taste good, after seeing the 1 Dollar Wagyu Steak vid, I was reminded that a method someone did to improve taste and texture of Eye of Round was to cook the steak then rest it in beef fat. Maybe a combination of 1 Hour Pineapple and resting it in beef fat could improve the taste? Likely the beefiness of the fat will counteract the mild sweetness of the pineapple.

    The problem with real pineapple is that it has sugar and acid along with the enzyme.
    You can buy the enzyme of pineapple in powder form. It tenderized like the real pineapple but doesn’t alter taste as much.

      The flavor isn't the issue tough. It's the broken proteins. Good tender beed has proteins but fibers are kept loose because of the marbling. Those are basically beefs put in a blender and back together. The sausage of beef if you want.
      Sweet and acid flavors actually can work pretty fine with fat and salty flavors.

      Tentacles acid is also a solvent, it working with the enzyme accelerates and makes the process harsher. Since bromelain is a pre digestive enzyme, the combination with acid is a combo that is synergic.
      Using just the enzyme is much more forgiving as far as time the meat can be exposed to it goes.
      And again, plunging any meat into a liquid will make it harder to get a crust and dilute beefiness flavour.
      The enzyme is sold in powder form so it doesn’t cause these side effects.

    For those who don’t understand what the dust thing is about: imagine a bunch of dust bunnies or dust in your vacuum cleaner, put water on it to make it wet, roll your fingers back and forth to see how grainy it is, and then put it on the first 1 hour option A steak.

    This is so legit! I had no idea about the enzyme in pineapple, and used pineapple puree to marinate beef for jerky... for 3 days! There was this weird outer coating of mush even after it was dehydrated. I ate it anyway but just because it wasn't gonna kill me and I paid for it! :) Flavor was actually great, but the texture... Blech!

    Just have to thank you! I had such a bad day today and then I watched this. HAHAHAHA!! From steak #2 to 3 to 4, I thought I was going to fall out of my chair laughing. You two made my day! I've subscribed for sure and learned to have my pineapple by itself or in a pina colada -- only way to go 😁
