I have watched 3 of your videos. They make me wish I could have had some traditional training to do this type of work. I do work with wood, but will never get to your level, mostly because of no training.
i think its wild(in a bad way) that you have to check local law and go ask if its okay to build this, where as a chef's knife is probably way bigger and people have acces to that like its nothing ... some laws are ment to be ignored , because there is an equal amount of consequences to following the rules as there is to not follow them

What polishing compound do you use on your blade. Or is it all wet stones?
I almost always use sandpaper when sharpening blade.
