      Definitely agree about salt. I did a salt-free year in 2021. Now I tried it again and realized that yes, it is an addictive poison. It triggers overeating- you go to the kitchen as an excuse to have salt with your food. Now even a small quantity of Himalayan salt feels too salty and undissolved grains of it on my salad burn the inside of my mouth.

    I made this the other day, and it came out perfect! Since I didn’t have probiotic pills, I figured a small cup of store-bought sauerkraut juice would do the same trick. I left it on the kitchen counter and it was ready in 4 days. I add them to every dish now. Having guilt-free, edema-free sauerkraut for the first time in my life! Life changing!

      @@princessyoung1858 No, but there is a little bit of salt in the store-bought sauerkraut juice. So maybe you end up with 3g of sodium per 1,5 l of product? Which is just 0,2 g of sodium per 100g! You can further reduce sodium by using the homemade sauerkraut juice for the next batch.

      Hydrochloric acid is not a health substance-- especially when spread throughout the body as it is with salt. The irritating and stimulating effects of salt should be self evident--it may be the most harmful and addicting substance known to man. You don't need someone to tell you coffee is not health food do you? Same with salt. Now watch the frenzied addicts pile on!

      @@jim5jim5jim5 HCL is only found in the stomach and without it u won’t be able to absorb nutrition and yeah you will get very unhealthy. Coffee can be healthy in right context. Has magnesium, caffeine acts similar to thyroid hormone, boosts cell metabolism to burn more glucose. It can be an issue for someone with low glycogen stores and blood sugar regulation issues

    If you want low salt kraut, you could just try using the juice from a previous ferment as a starter. If your ferment doesn't taste good after one weeks time, I would question wheather or not this is a valad way to preserve and creat lacto bacteria. I'm sure the peppers would hide some off tastes. It would also be ideal to measure the ph some how.

    Hey there. I’ve been making salt free kim chi and sauerkraut by using cayenne pepper in place of salt for years and love it. Also, you might consider a fermentation crock so you can make a whole bunch at a time. It makes the job way easier imo : )

    Been plant-based for about 6 months now, and everything was pretty good except I was struggling to digest, crippling gut unhappiness, I contemplated going back to animal diet, but I kept going because apart from gut irritations I was doing good, then I randomly grabbed a pot of sauerkraut in the supermarket and was instantly cured. I have tried probiotics like yakult and kefir before (going plant based) but they gave me acid, but the sauerkraut totally restored my gut function. Now I make my own too because real sauerkraut is very expensive and hard to get here.

    Salt does not ruin the benefits.....but less salt is good in my diet so I am happy to find this recipe. Would easily transfer into a kimchi considering the chili's use.

    I gave up salt too, nice to see you doing it. I’m on my 2nd week. Now, I do put a tiny pinch of pink salt in my salad dressing just because it’s pink salt (;
    Someone gave me a bottle of organic tamari 😒 so I’m adding micro doses in my dressing. Overall A LOT less than what I was used to.
    I will definitely try your recipe.

    Since it's sitting right there... have you tried just running everything through the juicer, collecting the fiber in the jar, and then just adding the cabbage water back?

    I couldn't tolerate sauerkraut until someone told me to empty the juice out of the jar completely. Than replace it with purified water right up to the top of the jar and let it set for about 5 minutes. than empty water out of jar again. The taste is more mild and now I like it and eat it quite often now.

    It’s not so much that salt inhibits bad bacteria than that it creates a favorable environment for lactobacillus bacteria, which outcompetes the others. Without salt it’s kind of a crapshoot as to what type dominates.

    I just got put on a salt restrictive diet. Have to learn how to do this because I love fermented veggies. Especially peppers. I do have one suggestion and maybe someone else can tell me why this is. When I have made fermented veggies of any kind in the past they stay crunchier in the wide mouth jars as opposed to the narrow mouthed jars. I use those only for dry storage now. I don't know what makes the difference but it does.

    I prefer Sauerkraut when it's chopped up finely, this Sauerkraut looks a little too mushy for me. I just made some raw kimchi too, using the whole leaf style. Cut the napa cabbage into 4 and wammo straight into the container after seasoning. I never add water to anything femented.

    The idea is to squeeze the cabbage to get the juice out so that the juice is covering the cabbage in the jar. Adding water shouldn’t be necessary. That’s what the cabbage juice is for. Will still work with water, though will be watered down.

    You can buy a ‘kraut basher’ a bit like a meat tenderiser to look at. Take care to eat it within a couple of weeks as pathogens can and will grow eventually as I found to my cost.

    Watching documentaries and reading articles about bonobo chimpanzees, I have seen them licking stones (for nutritional content) and collecting algae from rivers. Have you seen something like this?

    Man Here is the recipe you need: 1 cabbage shredded and 1 cabbage juiced. Put together. Liquid above cabbage! Put something heavy on it. Let it sit 48-72 h depending on outside temp. And enjoy! You can add herbs too

    Dude I love your video and I am going to check out some more but maybe try to stay a little more fact based. Salt does inhibit bad bacteria. Salt is needed in the body (we just consume way too much in our culture). Like everything, the poison is in the dose. I just hate to see a really good recipe and video be taken less seriously because its stating non-facts. Chili's do inhibit mold and microbe growth but I assure you that you can end up with moldy and or bad bacteria in a batch even if you add salt. I have seen it on a few fermented chili pastes personally.

    You should read "The Salt Fix", by James DiNicolantonio, an American cardiovascular research scientist...

    What do you do if you get hungry at night? I do intermittent fasting too but sometimes I'm really hungry and can't go to bed unless I was a couple bites of something.

      Salt does nothing but dehydrate you, what are you talking about? Our sodium requirements are very low, easily met with fruits and vegetables.

      @@vegetablepolice Our as in the entire population? Now you fail to realize that we're all different. Depending on your current health status you may need extra salt.
      It is also important to know that we need it for HCL production. So don't be scared of salt. Figure out how much you need and then go with it.
      But don't say salt does nothing but dehydrate you and that our requirements are very low. To some yes, but not to us all.

Table salt is celtic sea salt, himalayan salt etc. All the same shit, slightly better than iodized salt just because there's no chemicals used in manufacturing. Same basic effect on the body though, celtic sea salt is still like 99% sodium chloride with only tiny amounts of other trace minerals.

    Sodium is sodium, whether it comes from salt or fruits and veggies, it's a chemical element that has the same structure regardless of the source. Your body recognises it as the same thing and either utilises it as an electrolyte or excess is excreted through the urine.

      @@hoon_sol not really, most people with healthy kidneys will just excrete any excess chloride. Anything in enough quantity can be toxic but my point is that salt is not a poison as Kasey keeps saying. A poison is something inherently toxic that the body has no use for and immediately tries to eliminate.

      @@hoon_sol no it won't lol, the daily allowances for chloride are the same as sodium, it's a vital electrolyte and as long as you don't consume it in excess, it's not harmful. People consume salt their whole lives and have healthy kidneys. If what you're saying is true, a lot more people would be suffering from kidney failure.

      @@hoon_sol hey man I'm with you, people need to radically change their diets. The reason for disease and poor health is due to what people are putting in there mouths and yes, processed junk foods are overloaded with salt. BUT if someone is eating a healthy diet with lots of fruits and veggies and they sprinkle a bit of salt of their salads, I don't believe that's gonna cause a problem.

    heres my experience with sauerkraut. When i would experience chronic heart burn, sauerkraut would temporarily stop the heart burn with each meal. Thought i would share that with you, Just to let you know if you are curious.
