Prob a silly question, but do you blanch the broccoli rice and cauliflower rice or just put in uncooked? Besides making fresh I’ve seen it available in the frozen food section (which is how I’ve been buying it) so I guess just let it thaw out and then add to the bowl to mix up?

I don't have too much of an understanding, but when i read nutritional facts I've seen that coconut products such as the oil is high in saturated fat, but I see that everyone is using it especially for vegan/vegetarian meals. My doctor has told me to watch how much saturated fat i take in and has also suggested that i consider a vegan/vegetarian diet for my diabetes...so my question is what's the big hype with coconut oil (and other related products) and are there other less saturated fats i could use in vegan/vegetarian dishes (especially dessert)
yes! coconut is sort of an exception in the saturated fat world... Coconuts and coconut oil do contain saturated fat, but it is not the same as other sources of saturated fat because the fat content is coming from lauric acid- which in many ways is an exceptional ingredient because it has unique health properties due to the way your body processes it. It’s anti-viral, anti-bacterial, and can help to destroy many viruses. Coconut oil is also mostly made of medium chain fatty acids which produce many health benefits- and coconut oil is nature’s richest sources of these acids. Of course, it is very dense in calories and fat so we do need to be aware of how much we consume, but the saturated fat in coconuts is very different than the saturated fat in dairy, beef or butter. I hope this helps to clarify!

Kajori Mondal A zucchini would give more creaminess but you’d sorely miss the healthy fats from the avocado. Maybe add coconut oil or fatty nuts like walnuts or Brazil nuts?
Dang these look good! I recently found out I have Celiac disease (boo), and I’ve become obsessed with spaghetti squash (yaay!). I like it so much better than every other GF pasta I’ve tried so far, and it’s low carb, win-win!

Every Low carb recipe I've seen on the internet always looks so sad and lacking in colours, the main colors in low carb I always see is mostly brown and green. I thought you had to eat the rainbow to insure you get all your needed vitamins and minerals so how can this diet meet them?
well low carb is a lot of protein and vegetables, green is super colorful! I've also got yellow (spaghetti squash) and red (tomato sauce, vegetables in the tabbouleh, etc) to keep it colorful :)
Your recipes certainly are a ton better than most of them. I guess it's just prefer a lot more colour in my food so I feel like im eating the rainbow, not saying my way is best and each to their own though.
I also agree that I love whole food sources for carbs! I like these recipes for ideas on how to get more veggies in my diet- especially those greens!! Everyone needs more greens♡

Look in the drop down: bake for 45 minutes, until cooked through to 165°F (75°C).
