    Besan (Gram Flour): 1 cup
    Onion: 1 medium, finely chopped
    Green Chilies: 2-3, finely chopped
    Fresh Coriander: 2 tablespoons, finely chopped
    Cumin Seeds: 1 teaspoon
    Red Chili Powder: 1/2 teaspoon (adjust to taste)
    Turmeric Powder: 1/4 teaspoon
    Carom Seeds (Ajwain): 1/2 teaspoon
    Salt: to taste
    Water: as needed
    Oil: for frying
    Instructions:
    Prepare the Batter:
    In a mixing bowl, add the besan (gram flour).
    Gradually add water to the besan while whisking to make a smooth, thick batter. The batter should not be too runny; it should have a pancake-like consistency.
    Add the chopped onion, green chilies, fresh coriander, cumin seeds, red chili powder, turmeric powder, carom seeds, and salt to the batter.
    Mix everything well to ensure that all the ingredients are evenly distributed in the batter.
    Heat the Pan:
    Heat a non-stick pan or griddle over medium heat.
    Add a few drops of oil to the pan and spread it evenly.
    Cook the Bailay:
    Pour a ladleful of the batter onto the heated pan. Spread it gently with the back of the ladle to form a round, thin pancake.
    Drizzle a little oil around the edges and on the top of the bailay.
    Cook on medium heat until the edges start to lift and the bottom turns golden brown.
    Flip the bailay carefully and cook the other side until it is also golden brown and fully cooked.
    Serve:
    Once both sides are cooked, remove the bailay from the pan and place it on a plate lined with paper towels to absorb any excess oil.
    Serve hot with chutney, yogurt, or pickles.
