Cast iron is cheap, seasoned carbon steel does the same job is also cheap but is about 60% of the weight( for the top quality thick ones like De Buyer). Carbon steel is used in pro kitchens because it has the same properties as cast iron but is much more responsive, it heats up and cools down much quicker so it's easier to control the cooking.
You are totally right the Dr. of my friend that is with kidney failure told me that aluminium destroy your kidney eventually its not overnight and do not drink in can drinks in aluminum better to buy in glass and use cast iron is the best or you can use a cast iron with ceramic . Do not even use non stick pots and pan. Its you health so good pot & pans are very important.
@@Maya-ig9kx I have one enamel cast iron. Chipped shortly after purchase and it is a reputable brand. I have my mothers mother cast iron and mom's and stuff I have collected. I still use my revere ware from home chest. Ok dont laugh. Yes dont buy cheap. You get cheap results

Stainless steel is easiest to clean and lasts forever. Aluminum becomes porous with wear and can't be cleaned. If I take a bigger pot than necessary and fill it halfway, it will not likely boil over the stovetop and can be heated on a higher flame with the lid closed to cook faster.
Teflon is dangerous, specially when there are people who don't know how to mantein them and end up cooking with residues of teflon all over their food.

Don't buy anything that's aluminum. Go for cast iron, stainless steel, stonewear/ceramics, or glass.

Cast iron wont scratch. Cast iron and glass, stainless steel for your acidic foods.
She must be talking about the ceramic coating in the bottom, sides, and handle. Cast iron will scratch, though, but it takes effort.
