    At my school in the 80's, the cornflake top used to be rock hard... made with toffee, maybe? It was the best thing since sliced bread and none of the recipes I've found thus far make it like that.

    • @geoffsbakingblog

    What is golden syrup in the US. We have dark and light corn syrup and maple syrup..?

    • @geoffsbakingblog
      @geoffsbakingblog  6 ปีที่แล้ว +1

      Hi Alissa, golden syrup is a sugar syrup that is made with a lot of sugar and a little water and a couple of slices of lemon added. Then the lemon is removed. Lyles Golden Syrup is available in some places in the USA. But corn syrup is a good substitute, it will work fine.

    Lovely recipe. I tried this yesterday and when I was blind baking it the edges were falling on bottom of oven any ideas why? I'm new to all this

    • @geoffsbakingblog
      @geoffsbakingblog  3 ปีที่แล้ว

      Hi Z S. I am guessing that your tart pan hard a thin, sharp edge. If that is the case any pastry that hangs over the edge will drop off as the butter in the dough melts. You can cut off any excess before putting it in the oven, but it is important to make sure the pastry has been well chilled in the fridge, which firms it up and also gives time for the gluten in the dough to relax, so that it doesn't shrink too much during blind baking. My pan had a wide edge so the excess pastry didn't drop off, but some went into the pan as the sides shrank a little as they baked.
      If you shape the dough in the pan so that it comes up slightly above the rim, and stands up, if it is well chilled it should not fall off but should slide down to form part of the sides as the pastry shrinks during baking.
