You can leave out the star anise if you don’t have it. The nutmeg however, does add to the flavor of the pulao. If you can’t source it, it’s still fine but it will take away from the flavor of the pulao.

Sounds like the spices might have burned… that can cause bitterness.

It happens! Next time, just lower the flame to the lowest setting next time. You can slowly roast it without fear of burning 🥰
