You inspired my father and i to grow more of our own food this year, and we started preserving pickles,beets,hot peppers,san marzano tomatoes, what we know we consume in a year normally. We never grew so much food in our lives, so exciting, based on our calculations, we will have tomatoes for more than a year. Thank you for the inspiration ❤

If I have extra green growing, I cut them up, blanch them, make balls from the banched greens, freeze the balls on a cookie sheet and then put the frozen balls into freezer bags. These frozen balls of green veg can go into noodle dishes, soups and stews on nasty winter days when I don't feel like braving the weather out in the garden.

Wow! I cannot imagine living in a place with very little sun, I think would get depressed very quickly! Come to Florida! I live on the west coast of Florida near Sarasota. I have an acre with mango, avocado, sugar apple, mulberry, Mamey sapote, guava, and so much more! Those were all fruit trees not to mention my all year round garden. My husband is a real estate agent if you’re interested. He focuses on food forest properties or just large lots that are zoned properly so you can grow/do whatever you like.
I made kimchi back in April out of the wild garlic I harvested and some other vegetables. My dad invited me out for a barbecue a couple of weeks ago and being plant-based living nobody caters for me when I get invited to go places, I usually have to bring me own. So I did, I had my marinated king oyster mushrooms and I brought my kimchi which I never opened. I stupidly forgot to take the glass weight of it before I traveled in the car. I turned a corner and I could smell my kimchi, it smelt absolutely sensational, but it smashed all over the front seat of my car. I was tested that day. I kept my cool 😎, I could see my dad felt terrible for me, it smelt absolutely delicious and that's as far as it went for me. I never got to taste my lovely wild garlic kimchi 😭🤣💚🌿🌱

You might enjoy central Portugal. We have such amazing spring water here. We live at the foot of the magic mountains in the Sao Pedro do Sul region. You have to be prepared to do a lot of watering in summer but there's lots of potential to create your dream garden! 🙏✨️

Italy is definitely the country that you should seriously consider. I have a country villa between Rome and Naples and a small medieval retreat in Umbria between Rome and florence...Italy is the best place to be for food and the arts.

What about emigrating to Slavonia/ Croatia? We already had to much sun this year, that I can say: I’ve had enough! Probably not more than 10 days of rain from January until now, super fertile soil, everything is growing like crazy, lovely rolling hills landscape, enough fresh spring water from the mountains, a huge natural reserve behind our house and very few people… we love it!

I use kale in cold, fresh green drinks, I add spinach celery broccoli and some kale. It works best when I freeze the fresh vegetables and puree them all together in a vitamix. Machine. And I add water approximately 20 ounces, and I add flax seed, hemp seed, chip seed, and Holy basil seed for that protein boost Then I store about 10 ounces in little jars, as I take them out of the frig to drink throughout my day, I add one jar to 16 Oz glass and fill it up with more water because the green s are so concentrated. ..it's so yummy...I crave it Just watched your cooking...gonna make it for my Hubby tomorrow
I lived in Tuscany for a year and I thought it was one of the most beautiful places on Earth. We lived on the estate where they grew organic wine and olives and there was a tiny restaurant that had its own vegetable garden, plus they made a sweet wine called Vin Santo and to sit outside on a warm summers evening watching the fireflies and enjoying the wine was heaven. I’d like to eat Gaz’s food in such a place! ❤

Come to Malaysia. Specifically Cameron Highlands. Malaysia is a primarily hot country and doesn't have winter. Cameron is the city that supplies the greatest veggies, fuits, plants and flowers for a lot of places, it has the perfect weather for the perfect garden (at least from what I've seen). It has a colder temperature than in the rest of Malaysia (from my experience, the perfect temperature - not hot and not cold) and it rains in the perfect timing as well.😂 It's definitely worth to check out more deeply and see if it fits your expectations and plans.
My favourite kale dish: - salt the washed kale and knead it a little bit to mix and wilt the leaves - douse with oil of choice, layer them in a baking dish and bake in the oven until the top layer is crispy - mix in the kale with a Tahini-garlic-lemon-water sauce - put that on sour dough bread and eat!!

About moving abroad to continue your fantastic journey.. well as a fellow Brit originally living very close to beautiful Monmouthshire I now currently live in the Italian mountains in north italy not too far from lake como...with my doggy... healthy mountain air, long hot summers, fresh glacier lakes, pine trees and streams.... this area is full of prime organic food, from fresh cheese made in mountain huts, to olives, grapes, fruit and veg and nuts and figs and mushrooms that literally grow in the woodlands and can be plucked from the trees and fields... free for all to enjoy. As Italy offers the world's best cuisine apparently then it's a dream food haven for the likes of you and me my friend.... not to mention the free living lifestyle away from UK polotics, drab weather and depressing stressful rat race of work...! you'd be welcome anytime to crash at my small humble apartment while I happily guide you about and introduce you to some great locals and places of great food and joy. Your kale could also be used in a good soup or stew, you could do a vegan Tuscan soup with it. Also sautéed with mushrooms and served with potatoes, mashed or baked or even rice. If you have sweet potatoes those would also be delicious with kale along with carrots. Using other items with the kale that are high in vitamin c is also good to help with iron absorption, so citrus or onions, or even roses which can be used in a powder form etc. are good. The kimchi roti looks tasty and the sauce on top seems like it would be a great flavor combination. A teriyaki sauce would probably be good with that too. I would definitely try it. Here in oz most Kale varieties will keep growing year after year. My Tuscon bit over 1m tall. Some 4 yrs old... Also take cuttings all down the trunk easily. Thx for your inspo mate. Love the show...✌️

I will definitely be making this! If you do decide to leave Wales, please consider the Big Island of Hawai'i. We have all the climate zones except arctic tundra, so it's possible to find the sweet spot between too much rain and not enough. We grow organic vegetables, coffee, avocados, citrus, tropical fruits, and bananas year-round on our farm here. The island (and state) suffers from food insecurity, despite the crazy abundance, because almost all of our food is imported. Some of us are trying to change that, as well as promoting plant-based eating/living, and you could make a valuable contribution! Come visit!
I can recommend Nutribullet for ease of use. Simply fill the blending cup, screw the lid/blades on and then push down into the main unit. Much much easier than faffing around with weird fittings.

Those kale varieties that you showed normally produce for two years straight in my garden. Also through winter. After the first freezing they taste even better! When it gets really hot they start to go to flower in year two. Then I take the seeds from them.
Kimchi is something I make several times a year and then kimchi pancakes (which are so moreish), kimchi stew (amazing if you feel run down) or even kimchi as a side with ramen....I eat it with everything. Soooo good.

Wash the KALE leaves, cut away from the stalks, spin dry, stuff as many as will fit into jumbo plastic zip lock bags. Roll the bag tight starting at the bottom until you can roll and push as much air out of the bag as possible and then zip closed. Stuff the roll into the freezer and then use in smoothies, sprinkled into soups, stews, casseroles or wherever you need kale! You can even sprinkle over live fresh greens in salads. Cook the stalks if you're so inclined and stuff those into quart jars and pour your favorite vinegar over them, stuff multiple garlic cloves in the jars and even herbs if you so desire and then refrigerate. These are nice as a side dish in buddha bowls or anywhere you need something that is pickled! In vinegar they will last for more than a year!
Sardinia is the best place in italy if you want a mild winter place to live; in some parts near the sea it doesn’t get under 5 degrees all year round. Prepare to long dry summers in the high 30s/low 40s. Unfortunately in most places you cant live right by the sea, but you can in a property within a few hundred metres by the sea. Also try to find a place where its not too touristic(west coast is better for that).

Your kale could also be used in a good soup or stew, you could do a vegan Tuscan soup with it. Also sautéed with mushrooms and served with potatoes, mashed or baked or even rice. If you have sweet potatoes those would also be delicious with kale along with carrots. Using other items with the kale that are high in vitamin c is also good to help with iron absorption, so citrus or onions, or even roses which can be used in a powder form etc. are good.
The kimchi roti looks tasty and the sauce on top seems like it would be a great flavor combination. A teriyaki sauce would probably be good with that too. I would definitely try it.

Here in oz most Kale varieties will keep growing year after year. My Tuscon bit over 1m tall. Some 4 yrs old... Also take cuttings all down the trunk easily. Thx for your inspo mate. Love the show...✌️

I will definitely be making this! If you do decide to leave Wales, please consider the Big Island of Hawai'i. We have all the climate zones except arctic tundra, so it's possible to find the sweet spot between too much rain and not enough. We grow organic vegetables, coffee, avocados, citrus, tropical fruits, and bananas year-round on our farm here. The island (and state) suffers from food insecurity, despite the crazy abundance, because almost all of our food is imported. Some of us are trying to change that, as well as promoting plant-based eating/living, and you could make a valuable contribution! Come visit!
I can recommend Nutribullet for ease of use. Simply fill the blending cup, screw the lid/blades on and then push down into the main unit. Much much easier than faffing around with weird fittings.

Gaz you can freeze Kale, then put it in anything. I put it in smoothies, you get such a buzz.

Those kale varieties that you showed normally produce for two years straight in my garden. Also through winter. After the first freezing they taste even better! When it gets really hot they start to go to flower in year two. Then I take the seeds from them.

Kimchi is something I make several times a year and then kimchi pancakes (which are so moreish), kimchi stew (amazing if you feel run down) or even kimchi as a side with ramen....I eat it with everything. Soooo good.

i never thought about kale kimchi before. it is a bit bitter perhaps, but the dough omg, that's like murtabak dough, LOVE IT!!!!!!!!
Wash the KALE leaves, cut away from the stalks, spin dry, stuff as many as will fit into jumbo plastic zip lock bags. Roll the bag tight starting at the bottom until you can roll and push as much air out of the bag as possible and then zip closed. Stuff the roll into the freezer and then use in smoothies, sprinkled into soups, stews, casseroles or wherever you need kale! You can even sprinkle over live fresh greens in salads. Cook the stalks if you're so inclined and stuff those into quart jars and pour your favorite vinegar over them, stuff multiple garlic cloves in the jars and even herbs if you so desire and then refrigerate. These are nice as a side dish in buddha bowls or anywhere you need something that is pickled! In vinegar they will last for more than a year!

Sardinia is the best place in italy if you want a mild winter place to live; in some parts near the sea it doesn’t get under 5 degrees all year round. Prepare to long dry summers in the high 30s/low 40s. Unfortunately in most places you cant live right by the sea, but you can in a property within a few hundred metres by the sea. Also try to find a place where its not too touristic(west coast is better for that).

Garden over a social event any day 😂😂 I also don't know how anyone manages without sunshine. I would literally die a spirit death if I didn't have our African sunshine. We had a about 20 cloudy days this whole winter. I cannot fathom weeks of grey skies. You are courageous souls for living in cold countries!!
