I don’t know if you’ve ever tried this, but when you are cleaning the fish, just before you cut all the way through the tail, flip the fillet over and cut the skin off. It’s really easy and you won’t need to use your fork later to hold the fish.
By the way, great job on the videos. I really enjoy them and I also love my Bubba electric knife.

Hey Ron, yes Sir I am aware of that, for me I do most of all my filleting out on the ocean, and the regs. here in Cali. specify that the entire skin must stay attached to the rockfish for identification. I have in the past flipped the fillet over, and removed the skin leaving a small portion still attached, and then when I get home just remove the rest of it, but I've had a couple instances where I cut through all the way by accident, so now I just wait until I get home, and then remove the skin. Thank you so much for your support, and I am glad you enjoyed the videos!!!!!!!!!!!!!!!!
P.S. also have you found the need to sharpen your electric knife blades? If so how do you sharpen yours? Thank you so much Ron for your info!!!!!!!!!!!!!!!!!!!!

@@baldeaglefishingadventures I’ve only had my knife about 6 months and so far it hasn’t needed sharpening. There is a local guy I use that sharpens serrated blades, so I’m hoping he can sharpen these.
Good to know about leaving skin attached for identification. I usually clean my fish back at the dock or at home so it’s not an issue.

Nice fish. Ever tried scaling them, brining and then smoking whole? Worth a shot sometime. Nice to flake off the meat for smoked cod tacos.

Nice demo of the Bubba electric knife. I too wonder how long before the blades needs to be re-sharpen or replaced, especially if you cut a lot of big rockfish.. Really nice Red by the way.

Thank you so much!!!!! I've done 30 rockfish, some pretty good size, and it's still razor sharp, so will see!!
