With CERN specifically, they’re discovering new particles and learning more about how each particle behaves in different sets of conditions, and that is invaluable knowledge to have. The amount of people connecting this to their dreams cannot be coincidental. First, the High Luminosity LHC project (HiLumi, or HL LHC) is designed to increase the overall collision rates at the LHC interaction points (inside the detectors). In a particle accelerator most of the beam simply passes through each other. Nothing collides, there is no interaction. They just zip right past each other like nothing was there. Because particle physics is a process of statistical analysis it takes massive amounts of data (many collisions) to start to see very rare events emerge in the data. Increasing LHC luminosity will increase the collision rate (chance for a collision to occur). More data is collected and analyzed making it easier to spot rare events as a result. The HiLumi project is challenging because multiple systems have to be upgraded to support the higher luminosity beam. Some of the upgrades haven't been invented yet, and many designs are still experimental. It will take several years to finish designing and building upgraded components.
The second question, what are the "real-life ramifications," is actually answered somewhat by the first. As physics pushes itself beyond its current capabilities new inventions and engineering must be done to support it. This is where the benefits to humanity can be seen. New materials have to be put to use, and new methods developed to use those materials. For example, new super-conducting materials are required for HiLumi which involves cutting-edge research and engineering to implement. This, then, becomes available to industry generally. Companies are typically contracted to supply parts for the LHC. These companies take those experimental designs and turn them into practical technologies. These improvements can then be applied to several other areas those companies support like medicine, computing, energy, food safety, and so much more. It is a fantastic economic engine that helps drive innovation and improvement.
A good example of how this works would be the Apollo moon missions. That program introduced several new technologies that are still in common use today. Moon-tech can be found in a variety of products you probably have in your house, from clothing to the very materials your home is made of. What CERN does with its physics research ends up having the exact same benefits to humankind. There is "physics-tech" all over the place. It surrounds you. The World Wide Web (invented at CERN) is just one obvious example.

You spend decades theorizing and building out a framework for how something MIGHT be true on paper, and then you spend decades trying to find out if you were right. Sometimes you are. And it’s those breakthroughs that have resulted in things like rocket propulsion which took us to the moon, we’re talking about the difference between carriages and cars. So when you ask how this benefits humanity, it seems self-evident to me. What we stand to find out about the physics of universe by using something like this could lead to the next breakthrough that completely changes the world as we know it. It could unlock interstellar travel for all we know. Just the seeds, mind you, you and I would be long gone before we could harness the knowledge-but finding out is the first step.
With CERN specifically, they’re discovering new particles and learning more about how each particle behaves in different sets of conditions, and that is invaluable knowledge to have.
