It is entirely because of the stall mentality and they way single battles would have to be held. Best 2 out of 3 isn't going anywhere; now imagine stall team vs stall team at 60 minutes per match to have 3 matches end 6-6, that's over 3 hours of time (including time between battles) for a single round of competition. At that rate you take a 3 day tournament at worlds and turn it into at least 2-3 weeks. For nationals, you can take that from 2-3 days and make it at least a month long. Not too mention, since singles is a far easier format, you'll have more people willing to compete. It would be completely impractical to have tournaments like that when the people working at the tournament, some of the competitors, and the families of the competitors have lives and jobs that they cannot take that kind of time off to devote to a tournament for a video game.

In fact, I know Mark McQuillan, the runner up from this video, and his dad is also someone who regularly competes in the masters division of the same tournament. there are often entire families that play these competitions together.
Must say, there were a lot of similar pokemon in every battle they use like Aegislash, Garchomp, Kangaskahn, Salamence...Most are dragon type which explain why pokemon like Mawile with their Playrough really do giant 1hit K.O
IMO I think it would be kind of neat if the winner got a voucher for the next game for coming so far. I love pokemon but I don't have the skill to iv train, use special abilities/moves, or breed but I like watching these tournaments.

Everyone there seems so skilled and put so much thought and time into this game (which is amazing) I thought the officials would check to see if everyone is on a level playing field
Well there is the Pokemon preview so they wrote down teams. Also as battles go on they write items and maybe moves the Pokemon use. It just helps them keep information so they can better predict each other's moves.

I dont think there is any offical tournies in the republic (mostly fan organised) but there are in the north, in places like Derry and Belfast)

nope in vgc, you can only use pokemon that are caught or bred in kalos.
