Because Barbossa literally had Jack exiled to the island in a Mutiny. I don't remember excactly, but I do believe that Barbossa stayed execution, but chose exile. Barbossa has his story explained in later movies, and it all lines up.

Imagine removing Jack Sparrow in all the Pirates of the Carribeans movies. It becomes a dull serious movie. He brought so much color, variety, and comedy to that series. Imagine removing Jack Sparrow in all the Pirates of the Carribeans movies. It becomes a dull serious movie. He brought so much color, variety, and comedy to that series. Then he started singing I got a jar of dirt I got a jar of dirt, that wasn't in the script either but the entire scene was just so funny and iconic that they kept it in.
