Meatballs with Spaghetti

  • There's no more iconic pairing than meatballs with spaghetti. A lot of times, the noodle is the main focus of meals made at home. But this recipe focuses on the meatball and complements it with a delicious homemade sauce. When mixed together, it's a match that's made in heaven!

    INGREDIENTS⁠

    For the meatballs:⁠

    2 slices bread, crust removed⁠
    1/3 cup whole milk⁠
    1 lb ground beef⁠
    1 lb ground pork⁠
    1 1/2 tsp salt⁠
    1 tsp pepper⁠
    1/4 tsp red pepper flakes⁠
    1 tsp dried basil⁠
    1/2 tsp dried oregano⁠
    1 large egg⁠
    3 tbsp grated onion⁠
    3 cloves garlic⁠
    2 oz Parmesan cheese⁠

    For the sauce:⁠

    1 small onion grated⁠
    2 cloves garlic⁠
    1/2 tsp red pepper flakes⁠
    1 tsp dried basil⁠
    1/2 tsp dried oregano⁠
    1 tsp dried thyme⁠
    1/2 tsp fennel seeds⁠
    1 tsp salt⁠
    2 28-oz cans diced tomatoes (with juice)⁠

    For the pasta:⁠

    12 oz spaghetti⁠

    INSTRUCTIONS⁠

    For the meatballs:⁠

    Preheat oven to 375°F.⁠

    In a small bowl, tear the slices of bread (with the crust removed) into small pieces. Add the milk and mash into a paste. Then set aside.⁠

    In a large bowl, combine the beef, pork, prepared bread paste, salt, pepper, red pepper flakes, basil, oregano, egg, onion, garlic, and Parmesan. Using hands, combine and work together until the mixture is very evenly mixed. Do not worry about overmixing. Make sure it is evenly combined. Portion the mixture into 12 equal meatballs and set on a parchment-lined baking sheet.⁠

    In a 12-inch skillet, heat 1 tbsp olive oil over medium. Add half of the meatballs and brown on all sides, about 1-2 minutes per side. Repeat with the second half of meatballs. Once all the meatballs are browned, return to the parchment-lined baking sheet and bake in the preheated oven. Bake until the meatballs reach an internal temperature of 160°F, about 15-18 minutes.⁠

    For the sauce:⁠

    Heat the same skillet the meatballs were browned in over medium heat. Add the onion and cook until translucent, 3-4 minutes. Add the garlic and red pepper flakes, basil, oregano, thyme, fennel seeds, salt, and stir until fragrant, 1 minute. Add the tomatoes and bring to a boil. Once boiling, reduce to a low simmer for 20 minutes.⁠

    When the sauce is finished, dress the spaghetti to personal preference and use the remaining sauce with the meatballs.

    I learned to make meatballs from my mom who used the bred and milk technique. Watching food channels no one ever used this so I thought my mom was wrong. So glad to see you do this. Should have trusted mom!!!

    My Italian American dad taught me to crush dried herbs in my palm to release the oils in them. It works.

    Putting a nice light crust on the meatballs is an absolute triumph!! Yes, the meatball is the star of the show here but your pasta addition was great. I need to know how many “takes” it took to shread the onions manually without being In tears. Great job Kaleb.

      I love that this is all homemade. However, I would still be using a deeper pot to cook the outside of the meatballs so that when I add the stuff to make the sauce I have room to later combine them together. Then again I have 20 to 26 people for Dinner on the weekend when we do Family Dinner and if we have more people it can get up to 50 people. I am going to have to sit down with this recipe and figure out how to Double and Quadruple this recipe for the crowd I normally have. Lol

      the milk mash does work. I hadn't heard of it either until I made his meatball recipe with the marmalade.

      I use bread in milk for my meatloaf. Never done it in my meatballs though. I bet they would be great in a meatball sub, toasted rolls with either provolone, mozzarella or both with some sauce yum... Looking forward to trying this for sure!

    Kaleb, we just finished eating them for dinner and OMG, they're amazing!!! So flavorful, tender, moist... this recipe is a keeper! I added a touch of Worcestershire sauce because I saw that you put some in your cocktail meatballs. I added chopped fresh parsley because we love it. Thank you for sharing another great recipe. 💯😍

    Those meatballs look delicious. I usually simmer mine in the sauce for a bit. And if I’m making homemade sauce I will use San Marzano tomatoes. They make a great sauce.

    I'm definitely trying the bread trick next time! I bet it makes them so much better!... I usually like to brown my meatballs in the oven because there's less mess. I just line the try with foil and oil and every once in awhile give them a turn until they are brown. Works great!

    I had been using oatmeal with milk. I have to say I do like this process of the bread and milk mash. I like mixing the onion as well. I tried these methods when I made your holiday meatball recipe with the orange marmalade. So delicious! I can't say I like pork in my meatballs. I think pork is so much heavier, not lighter, and it tastes super weird. Pork also takes longer to cook which have made the beef overcook in my past experience. I just don't like ground pork in meatballs, but that's me. I won't even buy store bought meatballs due to the pork. But that's me, and they weren't your recipe. So, I will probably try this down the road just to see. You're the Master of the Kitchen, Kaleb. 😁 I also find dried basil has zero flavor compared to fresh. I keep hearing dried herbs have more flavor, and I buy more expensive herbs, but I find basil and cilantro dried are a waste, no flavor. I am going to try and dry my own this year.

      Try rubbing them with your fingers first or in your palm, it helps bring out the flavor and they will smell stronger too. Also there is nothing like growing your own organic herbs, then drying them. I usually have enough for the winter to cook with and to sprinkle on my chicken food for my girls good medicinal properties for all. It is cheaper to grow your own herbs too. Good luck!
