Super simple tutorial on how to enable Dark mode on Instagram!
Instagram Dark Mode is super simple with iOS 13 & 14 and Android 10. Instead of creating a Dark Mode inside the Instagram settings, Instagram worked with Apple and Android to make sure the operating system Dark Mode works natively with the Instagram app.
In order to use Instagram Dark Mode, you need iOS 13 or Android 10 operating systems.
Once you upgrade, you can simply turn on Dark Mode on your iPhone, iPad, or Android phone and it will turn your Instagram app dark as well.

Same. But I went back and turned off night mode the 2nd time. Checked and Instagram was back in light mode.
Just try the switch on and off a few times it’ll go back
