    Watching Don speaking his tasting notes, gesturing with his hands, reminds me of a conductor in front of a symphony, as if he is orchestrating his words, aromas, and taste into a multi-sensational artistic experience. :)

    Would love to see the "oxidation vs fermentation" video! It's not so simple to cleanly translate particular traditional tea processing terms to modern scientific terms

    Pretty sure this guy could be a skilled poet or writer. He is very good to find words to express complex things. Never heard anyone like this before.

    I've noticed similar things with a shu puerh I tasted a while ago. It was the autumn and the spring version of a micro-batch fermented shu puerh with the same fermentation parameters. While the autumn puerh was more aromatic, it was definitely thinner.
    That's why I agree that its not just the greener production of this dancong but also just the leafs chemical composition before picking.
    Edit: With winter picked tea, you also have a different type of stress on the plant because of the frost. This could also give you more aromatics because of the plants defensive mechanisms against type of stess, but this is just guessing

    Both teas sound delicious! I've grown to love Oolong so much over the years so I definitely need to give these a try. Thank you for discussing this, you definitely have one of my favourite tea channels on TH-cam. Always so detailed and informative

    Both teas are exquisite! Snow Phoenix happens to be my favorite tea - it's just magical... However my supply is running low and I'm dreading the time when I've run out of it. Any chance it will be back in stock?

    Combine a Spring for stronger taste and Winter for aromatics! Do you think the added elements would produce a more rounded fill in the gap tea? Or, would combining ruin it for the snobbish tea purist? :-)

    If you've never had the Mei Leaf Duck Sh*it, go order some now. It is special! I thought I had tasted Dancongs before and knew what they were about, until I tasted theirs, and then it was..Oooh! Okay. I see.

    Some weird background noise on this one, sounds like raindrops on the roof.
    Anyway, Dancong Oolong is really a treat, just a bit expensive, but I will definitely include some in my next order once the brexit dust has settled a bit.

    You dont make this up in your head lol. I also get ''wintery'' and more fresh notes on winter teas and that's why I like them.

    Would like to order and try it out but my current order has been sitting at customs in Frankfurt for two weeks now. F'n Brexit!
    Would like to receive it first to see which tee I need to get more from.

      I am a little worried about this, want to order but shipping fee of 23 Euro is quite high, so i'd order a bunch of stuff and then it will probably get stuck in customs forever and worst case they want to have tax paid on it. Would be nice if you can post an update if everything went smooth with customs!

    Get Celine to brew something in the tea that is not tea (a berry or nut or anything) and see if Don can tell what it is
