Would love to see the "oxidation vs fermentation" video! It's not so simple to cleanly translate particular traditional tea processing terms to modern scientific terms
I've noticed similar things with a shu puerh I tasted a while ago. It was the autumn and the spring version of a micro-batch fermented shu puerh with the same fermentation parameters. While the autumn puerh was more aromatic, it was definitely thinner. That's why I agree that its not just the greener production of this dancong but also just the leafs chemical composition before picking. Edit: With winter picked tea, you also have a different type of stress on the plant because of the frost. This could also give you more aromatics because of the plants defensive mechanisms against type of stess, but this is just guessing

Combine a Spring for stronger taste and Winter for aromatics! Do you think the added elements would produce a more rounded fill in the gap tea? Or, would combining ruin it for the snobbish tea purist? :-)

Some weird background noise on this one, sounds like raindrops on the roof. Anyway, Dancong Oolong is really a treat, just a bit expensive, but I will definitely include some in my next order once the brexit dust has settled a bit.
You mentioned the snowflake tea was half fermented and that it is a topic for another time. Could you make a video in the future expounding on the topic of fermentation of oolongs?

I am a little worried about this, want to order but shipping fee of 23 Euro is quite high, so i'd order a bunch of stuff and then it will probably get stuck in customs forever and worst case they want to have tax paid on it. Would be nice if you can post an update if everything went smooth with customs!

Get Celine to brew something in the tea that is not tea (a berry or nut or anything) and see if Don can tell what it is
