My Kerr 1982 canning book includes summer squash, hot pack or raw pack. 25 minutes pints, 30 minutes quarts. The book also includes a recipe for nutmeg whipped squash. 1 qt canned squash, 1/2 teaspoon salt, 2 tablespoon margarine (or butter), 1 tablespoon brown sugar, 1 teaspoon nutmeg. Cook all together then whip it all until smooth.
My grandmother would mix zucchini, a little onion, and tomatoes. I think she put oregano, salt and pepper in it, too. Processed as you would plain zucchini. That got my mother and me through many a lean month. Thank you for sharing all you knowledge! I was too young to really remember what she was doing, so finding your channel is a real blessing!

My grandmother was born in 1899 and she canned everything, I’m so grateful that I had a few years of training under her guidance. She passed away in 1989. I just love the energy you pour into your videos and the memories you bring back of my grandmother. Thank you ❤️

Me too! I looked everywhere. I planted 8 zucchini plants this spring and was drowning this summer wishing I could pressure can some to enjoy this winter😂.
@@Afroyogacollective I just p canned 8 pts of zucchini with peppers, onions, and tomatoes. Salt and oregano. All jars sealed except 1. I'm using lug lids. I'm still learning how to use them. 1-piece lids. Good luck. BTW The zucchini I'm using are from a volunteer plant. I got 8 zucchinis from it.
I just fried up a jar of squash I canned last summer. I put some onions and butter in the skillet with the squash and all but licked my plate clean. It was delicious!! Thanks for all your tips.
Thank you Mrs. H. I just got a Pressure cooker, gotta give Glory to God, I was praying that the LORD would help me do more as far as preparing food for my pantry. Out of the blue, that night, my Son showed up with a Pressure Canner! God is so good! 💕. I have been wanting one for so long, my Son was SO SURPRISED at my excitement, because I had NOT shared that I wanted one! Now... I am doing ALL my homework to get started! So excited! Oh, and the canning tools, did NOT include lid magnet... So am gonna have to find one! Thank You for all YOU do, you are an inspiration to me! 💕
Ah, works well with small loads. I have a 22 cup coffee pot with spigot that I got at the thrift store cheap ( missing parts ). Works great for hot water.

After watching i miss eating" Calabacitas" In lg pan you cut a few zucchini in circle pieces& add drained whole can tomatoes smashed up a few onions rings on top and 1 drained can whole corn salt & pepper add water 1/2covering veggies low heat steam 20 mins til tender then smother with Jack cheese. Cover til cheese melts 👍

As the Ball canning book doesn’t show how to can these...and in light of your cautionary warning, I found, in my Kerr canning book, guidelines for canning summer and zucchini squash. The book, published in 1944, lists 40 minutes at 10 pounds pressure to process quart jars. Now, folks can do what they wish with this info. I offer it as historical guides. My experience...no problems except the squash comes out rather soft...boarderline mushy, but TASTY! Have a wonderful day. Blessings from Maine!

I did a trial run on my new presto canner and I think I lost 5 years off my life. Every little noise it made I had heart failure😂😂😂 still conquering my fear. Lol. No, that might be a little dramatic, but so excited about following all your recipe. You are a force to be reckoned with! Blessings sister.
Maybe Mrs. HH can debunk the fear of using pressure canners in a video?? I see that a lot and to be honest, I haven't used mine yet, but I am a bit nervous as well.
LOL. The first time I used my all american canner, and the circle wt. started to dance around I ran out of the room calling my husband saying" it"s getting ready to blow ! " My husband ran into the room,then walked out with his glasses pulled down on his nose telling me I need to read the book again. Since then I've used it with no problem.
Use an instant pot. Set it and forget it. 20 min. for veggies and 90 min.for meats. I have eaten some 4 years old and you wouldn't believe the freshness and flavor.
I cold pack and can my squash and zucchini. I use the time that one batch is processing to get my next batch ready to go. I've never had any problems with them. And boy are they good. I love squash and zucchinis. Canning for me is such fun. What a feeling of accomplishment too. When SHTF I know we will have food ready and waiting.
This is a recipe you may like. I don't shred my zucchini, I do hashbrown dices, about 1/4". My family, my grandma, aunties, cousins have been making this recipe forever. When I first had it I thought NOPE not eating that! I gave it to my sister and she said it was the best relish ever. SO I made some myself and now I can about 100 jars a year just so when people come snatch it from my shelf, I don't run out. I just double, triple quadrupole and have 2 canners going at a time. I don't even do pickle relish anymore now. Love your channel, and appreciate your efforts! Sweet Zucchini Relish. Ingredients: 12 Cups shredded unpeeled Zucchini Place Zucchini and Onion in a large, non - metallic *I do a small dice instead, but shredded tastes just like diced) 4 Cups chopped Onion bowl, and sprinkle with 5 Tablespoons of Canning 5 Tablespoons Canning Salt. Use your hands to evenly mix the salt throughout the Zucchini and Onion. Refrigerate overnight. The following day, drain the Zucchini and Onion in a colander. and rinse with cool water. Squeeze out excess water and set aside. Other Ingredients: 1 Red Bell Pepper, chopped 1 Green Bell Pepper, chopped 6 Cups White Sugar ( or Splenda) 2 1/2 Cups White Vinegar 1 heaping Tablespoon Clearjel hot 3/4 Teaspoon Ground Nutmeg 3/4 Teaspoon Ground Turmeric 1 1/2 Teaspoons Celery Seed 1/2 Teaspoon Ground Black Pepper Place the Red and Green Bell Pepper, Sugar, Vinegar and Clearjel in a large pot. Add the Nutmeg, Turmeric, Celery Seed and Black Pepper. Stir to combine. Then add the drained Zucchini and Onion. Bring to a boil over medium high heat; then reduce the heat to medium low, and simmer 30 minutes. Meanwhile, sterilize 7 pint jars, and lids. Pack relish into sterilized jars, making sure there are no spaces or air pockets. ( Run table knife blade around edge to get rid of air pockets) Fill jars all the way to top. Screw on lids. Now you are going to process the Relish in a Water Bath: Place rack in the bottom of a large stockpot ( or canning pot); and fill halfway with boiling water. Carefully lower jars into pot using a jar holder. Pour in more boiling water, until tops of jars are covered by 2 inches of water. Bring water to a full boil, then cover and process for 30 minute.

Justfinished 7 quarts and 10 pints of zucchinis. Thanks for the help. I always enjoy canning with you. I have 14 more zucchinis to can tomorrow then on to a big batch of "weeds". I have a field full of greens from what we used to call hitchhikers. They are a plant named Bidens Alba. Most people call them weeds but the leaves are eatable and are delicious. Yes I forage for food as well. My field is loaded with hitchhikers, wild lettuce, wild garlic and grape leaves. All eatable and healthy. Plus the best thing...FREE. Foraging is a lot of work, but is so wort it. The Dandelions are gone for the summer it looks like. But while they were at their peak, I got a lot of greens and made a big batch of Dandelion Jelly. Soooo good. It tastes almost like honey. Keep up the great work and videos so we can "work" together some more. All my best.

The title is Kerr Home Canning and Freezing Book. I've had this book more than 40 years. You can buy it on Amazon for $34.20. The Ball book do have a recipe for Squash but it not presser canning it a freezer recipe. Different companies have recipes that Ball do not have. Just read through my new 16 qt Presto canner instruction booklet last night and you just demonstrated everything it said. ❤️ Have my mothers 22 qt but lost a plug (ordered), haven’t used it in years and it’s heavy. Didn’t know I was supposed to oil the gasket. Never read the instructions, just did what momma told me to do. and she was always with me when I used it. Now about canning that zucchini. Delmonte sells it in a can so I don’t mind canning my own too. I’ll can at my own risk. Not letting it go to waste! Thanks again for all you do! It’s like momma being right here reminding me how to.
The overgrown zucchini are also great for shredding and using for zucchini bread and zucchini cookies!! I love your spirit, so glad I found your homestead!! I have been gardening for years but just got chickens this year!!

I saw a vid somewhere explaining what is meant by "not USDA approved". It just means that it has not been tested by USDA. Not necessarily that it is unsafe. I don't know if it was the Red headed woman ( woman with a gadget?). Does anyone know? I trust Ms. H wholeheartedly and just canned 8 pints of ground beef today.

I’m learning a lot from you! I’m getting 6-8 lbs of summer squash a day and I’m dehydrating every night and pickling small ones now. I’ve never cared for blanched and frozen squash because of the texture and I would imagine the texture of canned squash is similar but in light of the need for food preservation right now I will try your method.

I found a pretty current issue of the Ball canning guide at our local Goodwill which is great because it has the current guidelines, but my 1937 issue has a recipe for squash where you cook it and mash it before adding to the jar. I love looking at the differences between the two. Thank you for your awesome videos!

I just went to Amazon and bought a 6 qt pressure cooker and a tool set that did include the magnet and bubbler, as well as the other tools you mentioned. You make it seems so easy, and the things you are canning are exactly the things I want to try to can. Thanks so much for your humor, practical advice, and your expertise! I hope I don't destroy my house.
I've used my 6qt pressure cooker to can for years. Why would instructions for canning be in the presto manual that came with it, if you can't can in it? Only does 4 pints, but handy for me, when I don't have enough produce for my 7qt. Presto

Young lady you have inspired me to can. I have preserved for fifty plus years. Mama taught me easy to preserve fruit. She never canned. Guess we never had enough to can. I’m number seven of eight children. I bought used large canner forty five years ago. Largest presto I’ve ever seen. Was terrified of it. Used it to make large batch of Brunswick stew to share with family after mama passed away in 1999. I bought 23qt presto last week. I have processed and canned 24 qts of spaghetti sauce and 7 qts of tomato juice. I bought two pineapples and waiting for them to ripen to beautiful golden color to make pineapple jam. Presently cooking down half bushel apples to use in fried pies. Will freeze them as not sure how to can them. Last ones I tried to put up in jars had off smell when I opened. Didn’t taste. Seal was good but something was off. Heartbreaking when that happens. You are so sweet to share your knowledge with us newbies at canning. Have frozen for years and lost food when power went out for ten days in 1971 ice storm. Thank you. Found my canner at ace hardware in Cornelia Georgia. Good people there ordered them from Tampa ace warehouse.
Lol...I was frantically searching NCFHP for squash and zucchini....I was about to get excited!!! (I work in Extension, and I get this question about 50 times every spring) The best thing I got out of this is my reinforced desire to ensure that I have five foot tall counters...I slouch when I work because it's a long way down to normal counters!!!! In lg pan you cut a few zucchini in circle pieces& add drained whole can tomatoes smashed up a few onions rings on top and 1 drained can whole corn salt & pepper add water 1/2covering veggies low heat steam 20 mins til tender then smother with Jack cheese. Cover til cheese melts 👍
We always add green chili also

As the Ball canning book doesn’t show how to can these...and in light of your cautionary warning, I found, in my Kerr canning book, guidelines for canning summer and zucchini squash. The book, published in 1944, lists 40 minutes at 10 pounds pressure to process quart jars. Now, folks can do what they wish with this info. I offer it as historical guides. My experience...no problems except the squash comes out rather soft...boarderline mushy, but TASTY! Have a wonderful day. Blessings from Maine!

I did a trial run on my new presto canner and I think I lost 5 years off my life. Every little noise it made I had heart failure😂😂😂 still conquering my fear. Lol. No, that might be a little dramatic, but so excited about following all your recipe. You are a force to be reckoned with! Blessings sister.
Maybe Mrs. HH can debunk the fear of using pressure canners in a video?? I see that a lot and to be honest, I haven't used mine yet, but I am a bit nervous as well.
LOL. The first time I used my all american canner, and the circle wt. started to dance around I ran out of the room calling my husband saying" it"s getting ready to blow ! " My husband ran into the room,then walked out with his glasses pulled down on his nose telling me I need to read the book again. Since then I've used it with no problem.

I feel you. I'm probably going to forget about it and wonder what the time is for or something.
Use an instant pot. Set it and forget it. 20 min. for veggies and 90 min.for meats. I have eaten some 4 years old and you wouldn't believe the freshness and flavor.
I cold pack and can my squash and zucchini. I use the time that one batch is processing to get my next batch ready to go. I've never had any problems with them. And boy are they good. I love squash and zucchinis. Canning for me is such fun. What a feeling of accomplishment too. When SHTF I know we will have food ready and waiting.
This is a recipe you may like. I don't shred my zucchini, I do hashbrown dices, about 1/4".
My family, my grandma, aunties, cousins have been making this recipe forever. When I first had it I thought NOPE not eating that! I gave it to my sister and she said it was the best relish ever. SO I made some myself and now I can about 100 jars a year just so when people come snatch it from my shelf, I don't run out. I just double, triple quadrupole and have 2 canners going at a time. I don't even do pickle relish anymore now.

Sweet Zucchini Relish.
Ingredients:
12 Cups shredded unpeeled Zucchini Place Zucchini and Onion in a large, non - metallic *I do a small dice instead, but shredded tastes just like diced)
4 Cups chopped Onion bowl, and sprinkle with 5 Tablespoons of Canning
5 Tablespoons Canning Salt. Use your hands to evenly mix the salt throughout
the Zucchini and Onion. Refrigerate overnight.
The following day, drain the Zucchini and Onion in a colander.
and rinse with cool water. Squeeze out excess water and set aside.
Other Ingredients:
1 Red Bell Pepper, chopped
1 Green Bell Pepper, chopped
6 Cups White Sugar ( or Splenda)
2 1/2 Cups White Vinegar
1 heaping Tablespoon Clearjel hot
3/4 Teaspoon Ground Nutmeg
3/4 Teaspoon Ground Turmeric
1 1/2 Teaspoons Celery Seed
1/2 Teaspoon Ground Black Pepper
Place the Red and Green Bell Pepper, Sugar, Vinegar and Clearjel in a large pot.
Add the Nutmeg, Turmeric, Celery Seed and Black Pepper. Stir to combine.
Then add the drained Zucchini and Onion.
Bring to a boil over medium high heat; then reduce the heat to medium low, and
simmer 30 minutes.
Meanwhile, sterilize 7 pint jars, and lids.
Pack relish into sterilized jars, making sure there are no spaces or air pockets. ( Run
table knife blade around edge to get rid of air pockets) Fill jars all the way to top.
Screw on lids.
Now you are going to process the Relish in a Water Bath:
Place rack in the bottom of a large stockpot ( or canning pot); and fill halfway with
boiling water. Carefully lower jars into pot using a jar holder. Pour in more boiling water, until tops of jars are covered by 2 inches
of water. Bring water to a full boil, then cover and process for 30 minute.

Justfinished 7 quarts and 10 pints of zucchinis. Thanks for the help. I always enjoy canning with you. I have 14 more zucchinis to can tomorrow then on to a big batch of "weeds". I have a field full of greens from what we used to call hitchhikers. They are a plant named Bidens Alba. Most people call them weeds but the leaves are eatable and are delicious. Yes I forage for food as well. My field is loaded with hitchhikers, wild lettuce, wild garlic and grape leaves. All eatable and healthy. Plus the best thing...FREE. Foraging is a lot of work, but is so wort it. The Dandelions are gone for the summer it looks like. But while they were at their peak, I got a lot of greens and made a big batch of Dandelion Jelly. Soooo good. It tastes almost like honey.
Keep up the great work and videos so we can "work" together some more.

The title is Kerr Home Canning and Freezing Book. I've had this book more than 40 years. You can buy it on Amazon for $34.20. The Ball book do have a recipe for Squash but it not presser canning it a freezer recipe. Different companies have recipes that Ball do not have. Just read through my new 16 qt Presto canner instruction booklet last night and you just demonstrated everything it said. ❤️ Have my mothers 22 qt but lost a plug (ordered), haven’t used it in years and it’s heavy. Didn’t know I was supposed to oil the gasket. Never read the instructions, just did what momma told me to do. and she was always with me when I used it. Now about canning that zucchini. Delmonte sells it in a can so I don’t mind canning my own too. I’ll can at my own risk. Not letting it go to waste! Thanks again for all you do! It’s like momma being right here reminding me how to.

I checked into that. Canning squash, winter squash, and pumpkin is USDA approved the way she’s doing it, in chunks, but not puréed. So, it’s good!
Summer squash is not approved, but I don't know what summer squash is. 😂 I thought it was all summer squash.
I saw a vid somewhere explaining what is meant by "not USDA approved". It just means that it has not been tested by USDA. Not necessarily that it is unsafe. I don't know if it was the Red headed woman ( woman with a gadget?). Does anyone know? I trust Ms. H wholeheartedly and just canned 8 pints of ground beef today.

I’m learning a lot from you! I’m getting 6-8 lbs of summer squash a day and I’m dehydrating every night and pickling small ones now. I’ve never cared for blanched and frozen squash because of the texture and I would imagine the texture of canned squash is similar but in light of the need for food preservation right now I will try your method.

I found a pretty current issue of the Ball canning guide at our local Goodwill which is great because it has the current guidelines, but my 1937 issue has a recipe for squash where you cook it and mash it before adding to the jar. I love looking at the differences between the two. Thank you for your awesome videos!

I just went to Amazon and bought a 6 qt pressure cooker and a tool set that did include the magnet and bubbler, as well as the other tools you mentioned. You make it seems so easy, and the things you are canning are exactly the things I want to try to can. Thanks so much for your humor, practical advice, and your expertise! I hope I don't destroy my house.
Be sure to use a rack under the jars or they'll crack.
A pressure cooker cannot be used to pressure can. A pressure canner CAN be used to pressure cook.
I've used my 6qt pressure cooker to can for years. Why would instructions for canning be in the presto manual that came with it, if you can't can in it? Only does 4 pints, but handy for me, when I don't have enough produce for my 7qt. Presto

Young lady you have inspired me to can. I have preserved for fifty plus years. Mama taught me easy to preserve fruit. She never canned. Guess we never had enough to can. I’m number seven of eight children. I bought used large canner forty five years ago. Largest presto I’ve ever seen. Was terrified of it. Used it to make large batch of Brunswick stew to share with family after mama passed away in 1999. I bought 23qt presto last week. I have processed and canned 24 qts of spaghetti sauce and 7 qts of tomato juice. I bought two pineapples and waiting for them to ripen to beautiful golden color to make pineapple jam. Presently cooking down half bushel apples to use in fried pies. Will freeze them as not sure how to can them. Last ones I tried to put up in jars had off smell when I opened. Didn’t taste. Seal was good but something was off. Heartbreaking when that happens. You are so sweet to share your knowledge with us newbies at canning. Have frozen for years and lost food when power went out for ten days in 1971 ice storm. Thank you. Found my canner at ace hardware in Cornelia Georgia. Good people there ordered them from Tampa ace warehouse.

(I work in Extension, and I get this question about 50 times every spring) The best thing I got out of this is my reinforced desire to ensure that I have five foot tall counters...I slouch when I work because it's a long way down to normal counters!!!!
