Never be afraid to speak the truth! The lowly sweet potato is awesome and packed with nutrients. When growing up and my grandmother said she made pie, it assumed it was a sweet potato pie.
But Chef, you have never tasted my Mama’s Mile-high Pumpkin Chiffon Pie with double the spices…total awesomeness. It is now up to me to uphold the tradition. Enjoy your videos always. I have learned so much! Thank you and Happy Thanksgiving to you and yours!
Very old recipe that cooks the pumpkin with egg yolks and brown sugar and spices. Egg whites are beaten into meringue and then folded into cooled pumpkin mixture. It also uses unflavored gelatin. Poured into prebaked pie crust. This pie freezes well, but my family fought over every slice!
@@lynnbright6862 hello Lynn. This sounds more fluffy and lighter than the norm. I’m going to look up and make it later this month. Thanks. Did you notice at first the words were highlighted like if u clicked it you’d be taken right to it? Then poof it disappeared. Maybe Chef didn’t like that?🤗
Growing up my family would make sweet potatoes and we'd eat them mashed up with milk. Kind of like a soup. So good! I'm definitely making this pie! Thanks, Chef Billy and happy holidays!
Definitely YES to the sweet potato pie. My grandmother always made sweet potato pie for the holidays and, if I begged enough 😊, she would make it at other times as well. You could count on sweet potato pie and pecan pie on every holiday. And as a special birthday cake she would always make her from-scratch 7 layer caramel cake for me. Man I miss Grandmama ❤❤❤ This definitely took me back😊
100% truth! Sweet potato pie is my favorite! It’s not Thanksgiving without my sweet potato pie. We have a little guy who calls it marshmallow pie because of the topping! I may have to give this recipe a try after 20+ years of baking my recipe. PS - NEVER boil your sweet potatoes for a pie because they will get water logged. Take the time and roast them like Billy!
I’m new to the channel and I noticed that you’re using Brian Lagerstrom’s kitchen. That’s so nice of him to let you do that!! 😁👏🏻 What do you think about using cold beef tallow straight from the refrigerator instead of lard? I have a bunch of it. It’s pure white without any impurities because I rendered it myself. Also, what are your thoughts on using vodka? I’m going to be drinking it on Thanksgiving morning 100%, but I’m wondering what you think about using it in pie dough as a substitute for water.
Brian Lagerstrom's kitchen? I live 300 miles from him. We actually have different stoves, cabinets, tile, countertops, island, and fridges :-) You're actually the second person this week that has said this. Too funny. Tallow could actually work and vodka is a great ingredient to make a flaky crust!
Yes Sweet Potato Pie is far superior! I always give the peelings to my dogs! They love them. By the way I’ll be right over for my piece! Thanks. Oh and please make some coffee too! Thanks Chef!
I'm with you. I grew up on sweet potato pie - which looked just like pumpkin pie - but punpkin is alwaya a disappointment. Zero flavor. In my entire life I've only had one pumpkin pie that could potentially stand near to the sweet potato pies I had when I was a kid.
Most people don't put enough spices in their pumpkin pie, so it turns out bland. Also, the pumpkin pies you get from the store are mostly awful; if you tried a store pie and didn't like it, try making one yourself using canned pumpkin (and up the amount of spice a little).
Ok..i just spent HOURS and a dozen eggs trying to make the meringue and my mom brought to my attention that I am at a higher elevation and thats why the egg whites just stayed flaccid and weepy. Will the meringue recipe still work with the marshmallow fluff if I made the meringue with cornstarch, less sugar and water heated up to melty and then cooled and added to the egg whites?p.s. a micro drop of yolk got into my 1st attempt...the internet told me thats a huge no no
Having been raised on sweet potato pie, the first time I tried pumpkin pie was a massive disappointment! I’ve never known a black person who enjoys pumpkin pie. We tolerate it around the holidays. The canned filling isn’t even made with real pumpkin. It’s bitter and lacking in depth. I’ve always challenged myself with things that scare me or turn me off so I’ll continually seek out a way to connect with an experience. I made a pumpkin pie myself in one such attempt and nothing I did to it could make it palatable for me.
Most supermarkets now will carry it in their Latin/Hispanic sections. Just ask someone at your local. If they don't have it they can definitely order it for you.
Is that a store-bought pumpkin pie?! You can't put store-bought anything up against baking something from scratch!! That's stacking the deck in your favor. DISQUALIFIED! Re: confirmation bias.
Actually I like both. I can't think of any other dish using pumpkin that I'd eat while I eat sweet potatoes frequently always baked/roasted . I'll pass on the marshmallow merengue......too damn sweet, same goes for candied sweet potatoes/candied "yams". The south seems to have a love affair with sugar.

Thanks. This sounds very special! I’ll look this up!

I have to agree with you. The first time I had the privilege of trying sweet potato pie I was convinced . It was delicious.🎉🎉🎉
I’m trying it this year! You inspired this novice to go for it
Amazing! Hope you love it as much as we do
Growing up my family would make sweet potatoes and we'd eat them mashed up with milk. Kind of like a soup. So good! I'm definitely making this pie! Thanks, Chef Billy and happy holidays!
You are correct!
But, and just hear me out, blackberry cobbler is the king.
Nope. You gotta hear ME out. Strawberry rhubarb a is the absolute best!❤❤🍓🍓

Totally making this for thanksgiving. Had sweet potato pie yesterday from a bizarre & was amazing!

This native Oregon boy loves Georgian Candied Squash pie. I grow 5 or 6 each year and the family looks forward to the pies.
Just a shout out from a wannabe chef that loves to cook for enjoyment and watches ALL the channels, you present awesome recipes and techniques.
Love your videos, Billy. Keep up the good work!!
I just made one last night. So good!
hahaha! "DUHHH!!!!" Looks/sounds fantastic. Thanks for sharing. 🙂👍
Yes!! A soul food staple for the holidays!
Tarheel here. You are correct. Sweet potato pie is superior.
💯
Looks great. Almost 25% as good as a pumpkin pie with whipped cream.

I’ve been saying this for decades!
Thank you. You’re invited to the picnic now.
Yes, it is!!! But stop giving away our Southern secrets to all the Yankees!!😂🤣😂🤣
That's cuz he is a northern himself lol
I gave you a thumbs up, just for admitting that sweet potato pie is FAR superior to pumpkin pie. But i was not disappointed video was GOOD❤
agreed
Yes Sweet Potato Pie is far superior! I always give the peelings to my dogs! They love them. By the way I’ll be right over for my piece! Thanks. Oh and please make some coffee too! Thanks Chef!
I've alternated over the years. Similar tastes but sweet potatoes are so, so much easier to work with if you go fresh
I'm with you. I grew up on sweet potato pie - which looked just like pumpkin pie - but punpkin is alwaya a disappointment. Zero flavor. In my entire life I've only had one pumpkin pie that could potentially stand near to the sweet potato pies I had when I was a kid.

Once I tasted sweet potato pie (Paula Deen’s recipe with meringue), I found I never needed to waste my time on pumpkin pie ever again 😅
Ever!
I have to agree chef. I love both, but sweet potato has my heart. I typically bake both. My husband prefers pumpkin if you can believe it.
What can I use instead of cream of tartar and marshmallow whip?
AMEN
I agree with your daughter and you.❤
I have organic canned pureed sweet potatoes. Can I use that in place of fresh?
I think you could
Sweet Potato pie is too sweet for my taste. I ❤ Pumpkin (scratch-homemade, of course).
I'm from Louisiana. If you put a slice of each on my plate, I wouldn't be able to tell the difference.
Absolutely.
I love your rolling pin! Where do I get one?
Amazon

Pumpkin pie is good, but sweet potato pie is better.
ANY pie is better than pumpkin pie
You have probably only had pumpkin pie from a store. I make home made, and it is one of my favorite things to eat, not just my favorite pie.
Having been raised on sweet potato pie, the first time I tried pumpkin pie was a massive disappointment! I’ve never known a black person who enjoys pumpkin pie. We tolerate it around the holidays. Try making it with butternut squash. That's my family secret. The catch is to drain it well enough because you don't want a thin, runny pie.
Better than pum... Heresy!!! Shun the non-believer!!!
It's ok, you can have mine.😉
😂😂 I 100% agree with Billy, but your comment made me chuckle. I needed that, so thank you!
Where can I buy lard?
Most supermarkets now will carry it in their Latin/Hispanic sections. Just ask someone at your local. If they don't have it they can definitely order it for you.
👍
I bet Japanese yam pie would be even better than sweet potato pie, especially with that chestnut flavor. But the color might be weird (gray?)
Welcome to the Southern Black Thanksgiving experience!!!😂 There are many more secrets to uncover.
They are basically the same texture. Taste similar.
This looks insane
Butternut pie is superior to both.
You gonna ship me one? 😂😂😂
I prefer pumpkin pie, sweet potato has a texture that I don't particularly like.
Can you add metric and Celcius in your videos?
It is better but whenever i’ve made it, no one else eats it so I don’t bother anymore
Sry not sry.
Is that a store-bought pumpkin pie?! You can't put store-bought anything up against baking something from scratch!! That's stacking the deck in your favor.
DISQUALIFIED! Re: confirmation bias.
Sweet potatoes do not "breed".
There are different 'verities'.
you're right, varieties. I misspoke.
Absolutely hate sweet potato anything. Everyone in family likes it, but I can't stand it for some reason
It's ok. Not everything is for everybody.
I think that sweet potato pie has an intense (but pleasant) taste, but most people make it WAY too sweet.
Burning the marshmallow topping is NOT ok. Ten minutes is WAY too long and welp, that's what you get. A ruined pie. SMH...
😂😂
Umm I think that's a yam. Sweet potatos are more yellow and definitely not sweet.
Sorry don’t agree
Wrong, don’t say something because of your personal taste.
Actually I like both. I can't think of any other dish using pumpkin that I'd eat while I eat sweet potatoes frequently always baked/roasted .
