    As for pre-columbian exchange pizza, pizza can refer to very different pies. My Italian-born great great grandmother made “pizza rustica,” which is a quiche-like dish with pasta in a pie crust. She died in 1919, but her recipe has been passed down the generations and we make it every Easter. We usually call it “Easter Pie” in English.

    Most Chicagoans only have the deep-dish pie for special occasions or to show off to out of towners. On regular days, we eat Chicago thin-crust, or "tavern" pizza. Similar to St. Louis with thin cracker crust cut in squares, the sauce is more savory, and Italian sausage is almost mandatory. A local chain called Rossati's makes the best.

    You have not mentioned the Scottish cuisine of a pizza crunch supper. This is a pizza which is battered and fried and served with chips (like really chunky fries). Not kidding.

    a dozen years ago a group of friends took a trip to NY, we bought "real" pizza's and a pitcher of soda, 6 people in the group, my share for 2 slices, that I HATED, and my soda cost me $22. The pizza was disgusting, supposedly the "oldest" pizza shop in NY. I brought it up to my friends "I prefer the Americanized pizza we get at our local pizza shop" and GOD I had New Yorkers giving the look of death when they heard me say it. Screw them, the pizza was disgusting and I paid a fortune for 2 slices that tasted like it fell on the floor multiple times.

    The best pizza is the one that makes you happiest when you have it. It doesn't matter where it's from, what the ingredients are, as long as it's essentially "pizza-like" everything else is to personal taste.
    Sadly, I can't have pizza anymore. Too many carbs :( (yay for diabetes... 😏)

      There are low carbs alternatives, for example using cauliflower as an alternative. It's not the same stuff, but it's something 🙏and I'm Italian.

    BEST Pizza I ever had was from an independent Pizzeria in my home town - fusion food... Crispy Aromatic Duck Pizza! Hoisin sauce in with the tomato sauce, shredded duck, spring onions and cucumber batons under mozzarella. Mind blowing taste!

I'm still kinda ticked off that they could make a history of pizza video and dis New Haven so hard. Most spots here don't even serve typical soda, we have our own local brand, Foxon Park... smh

    There is a chain in the San Francisco Bay Area called Skipolini's, which features a variant they call the Prego. Nothing to do with that brand of sauce. It is called such because doctors will recommend women who are overdue for delivery to go have a Skipolini's Prego for dinner, and schedule them for delivery early next morning. It supposedly has a better than 80% success rate for inducing delivery. It used to be written up in the San Francisco Chronicle about once a year.

    I love Hawaiian pizza! Pizza Hut is my favorite pizza.....in no small part thanks to the chain originating in my hometown and it was my job for about 6 months back in 1989.

    Pinaapple and ham is a great combo, even on pizza, just use fresh pineapple! Also figs on pizza need to be more mainstream, figs and salty food is also an amazing pairing! And pizza fritta and it's cousin, Hungarian lángos (langosh), usually served with ketchup, garlic and cheese are popular across the Balkans and eastern and central Europe!

      🍍is actually delicious on pizza imho. The sweetness of the little pieces of fruit pair so harmoniously with the savory flavors of sauces & roasted veggies.
      Tbh, one fave of mine is bacon crumbles & pineapple with olives & artichoke hearts, with either a creamy white sauce or a robust red.

    This episode made me salivate way too much.. So many delicious photos!!
    As for my personal favourite pizza place.. I think the best pizzas I've had were in a small, potantially maffia-run restaurant just up the hill from the hotel my family was staying during our vacation to Sicily, named Il Falco. Do they make the best pizzas in the world? Probably not.. But the memory is good :)

    I don’t know how it happened but less than 5 miles from my house there’s a Papa Johns, Pizza Hut, and Dominoes but there’s more! A mere two blocks away from my house there are 3 family owned pizzerias all located in the same strip mall. There’s Two Brothers (the most expensive in the area) and also Marino’s Pizza and Mike’s Pizza. All three family owned pizzerias are so good in their own way. I really need to move further away from temptation. LoL.

    Lombardi's was not opened in 1905. Lombardi himself only came to the US in November 1904. Look to Peter Regas' research that unveiled who truly started what became Lombardi's, Filippo Milone.

    I'll do one better and name two pizzerias.
    1. Pasquale's, which is sadly permanently closed and the lot it was on now a mattress store, had great pizza and a suspicious use of exotic Italian sports cars for deliveries. The owner personally informed me that Sicilian style, the style I had ordered and was eating at the time, was his favorite.
    2. Antonio's; a humble place that is easily missed if you blink but can make a lot of varieties of Greek, Italian, and American pizzas. My favorite from them is their Tuscan style with a white sauce.

    The best pizza I have eaten was made by an Egyptian in Providence, RI. This includes dozens of pies throughout NYC & upstate, NJ, CA, NOLA, Naples, Sicily & Milan.

    All 4 of my grandparents were Italian (from Naples and Sicily), and I grew up in Queens. I’ve lived in Los Angeles for over 20 years at this point, and I was a pizza snob for a while. But it turns out that LA pizza can be good too. One big complaint is that Sicilian pizza-which I love-is in short supply over here. Also, I am still not into Hawaiian. If it’s not traditional toppings, I insist we call it “flatbread.” 😂

    Years ago, while reading Homer for a class I came across how things were so bad that the sailors (? - decades ago, so forgive me if wrong) had to "eat their plates" and I wondered if that was something that led to pizza. My life blew apart shortly after and I never did get around to learning ancient Greek.

    In Massachusetts you will find Bar style pizza (very thin crust, topping all the way to the edge), named for originating at bars; and Greek style pizza (cooked in a shallow round pan), named for originating in pizzerias owned by Greek immigrants.

    There are 3 styles of pizza that I will eat, I have tried almost everything in different parts of the US and in Italy, but the 3 best are also the 3 most 'authentic" in terms of history. First is Naples style in Italy, which is the style that NY pizza is molded after that is the second one I will eat. Third, and this is the one I have most often, is the style of where I am from - Columbus style pizza, which is a thin (usually cracker style) crust cut into squares. Those thick abominations are not pizza, it;'s just a way to pile cheap ingredients onto subpar dough. And finally pineapples do not belong on pizza that is a crime against humanity.

    OH YEAH -- best crust, sauce -- whole mozzarella...the chicago style 'italian beef' sandwiches are legit.

    Quonset Pizza in Waukegan Illinois. The building is built around a real military surplus quonset hut and the pizza business was actually started by a guy who brought back a pizza recipe from Italy after WW2.

    Pizza Hut's pizzas have been excellent since it changed its dough a few years ago. Even better is a popular local family-owned Italian restaurant called "Gino's Italian Restaurant and Pizza" or simply, Gino's, which serves fantastic, well, everything, but their pizza is especially delicious.

    Brick Oven in Provo Utah is the best pizza I have ever had. I've had pizza from places across the state and other parts of the world including Austria (closest I ever got to Italy) and while the Austrian pizza was delicious, Brick Oven never fails no matter which kind of pizza I order.

    I love Pedone's on PCH near Torrance beach. I'm unsure what their secret is, kinda don't want to know... but never once had a bad experience there, since childhood. Domino's is also good to me, but that might trigger a few pizza nerds

    Pizza is only a branch of the overall Mediterranean topped bread style of food. You can find Pizza like dishes in Levntine dishes as well as in Hijazi dishes in Arabia. Putting cheese and other dairy products as well as olives and oil on top of bread is a mainstay dish in this part of the world. Fatayer we call them, the most prominent types are with Labnah (with or without honey) And with thyme.
    Again they are made almost exactly how a pizza is made, with Further north you go the more half closed they get, and the further south it is becomes basically a circular dish ala pizza. If putting tomatoes on top of bread is the marker for tracing back the dish to Italy then yeah go for it, otherwise putting toppings on top of dough and then baking it has been a Mediterranean practice for thousands of years, and no single country or region gets to claim the origin of the practice, wither they are different branches of a single ancient dish or made independently in isolation that is a different conversation.
    Ishaq bin Ibrahim AlMousely was an Abassid author/poet during Haroon AlRashid's reign and he made a cook book in which he described recipes in the form of poems, one of those poems described making a dough as if bread, and then topping it with cheese, and then topping it with olive oil or cooked ground meat before putting it in the oven until it "cracks". Does that mean that Abassid made the first pizza? No it doesn't.
    I guess a combination of different factors ultimately lead to Italy claiming the practice for its own, propagated by American media dominance at the time, which meant other Mediterranean nations who had very similar dishes ended up being sidelined.

    Favorite was Toci's Pizza of Brooklyn. Dude who owned it was definitely full of New York attitude, but in a good way. He made the best pizza and wings we've ever had. But he quit to work for UPS because it was steadier for income and less work. Don't blame him, but dang do I miss it.

    St. Louis style pizza makes me ashamed to call St. Louis my home. I've always described that style to others as "rubber on a cracker." I have no idea why it's popular.

      I visited a roommate's family in St. Louis and they were raving over the pizza they had ordered, "Wait'll you try this, it's the best ever." Until then my take was even mediocre pizza is fantastic. No, I was wrong. Something about that pizza made it almost inedible, but they were all ranting about how wonderful it was. Is it the Provel? Maybe it's the water. 😄

    oh yeah like someone mentioned, I guess Flammkuchen is my favorite kind of 'pizza' or lets say 'pizza style food'
    since I don't like molten cheese, I don't like Pizza all that much, I prefer Spinach Pizza if I get one, but meh I usually opt for different food than pizza if I have the choice
    also 'pineapple doesn't belong on pizza' is a stupid argument and it needs to stop (you can say 'I don't like it' that is fine lol)

    All this interesting information about pizzas, but nothing about why seemingly only Americans call them pies, just that word thrown in there like everyone should automatically understand the connection... I reckon if someone overheard you call a pizza a pie in the UK you might actually get fined by the Pie And Pastie Standards Agency. A pizza restaurant near me got closed down by PAPSA because they had a cartoon speech bubble on a billboard outside saying "Check out our pies", but they didn't sell any pies, just pizzas.
    Ah, I'm sorry, I'm sure you have a video short coming about the whole "pie" controversy already...

    16:29 The most historically up to date version of the history is that modern day pizza napoletana is actually a reinvention from after WWII, with thr introduction of North American "Manitoba" flour to Napoli, their dropping of the use of whole and semi-whole grain flour in favor of 00 flour by the 60s, and the wider availability of commerical dry yeast as a strong leavener.
    So it's actually early American pizza, particularly in places like New Haven and coal oven New York pizzerias that are closest to 1800s pizza napoletana. You can find a London newspaper article describing pizza in Napoli in 1860 talking about pizza being famed for it's crispiness and 5 minute bakes.
    The closest you'll get to what Lombardi's was like in the early 1900s is Totonno's. The exact Lombardi's recipe was lost to time and their current recipe is some variation of Andrew Bellucci's reinvented version. But Totonno's maintained most of it. And it matches the 1860 method of making a pie.

    Detroit is a solid pie, all pies are pretty great really. But I prefer a Mountain pie that they serve at Beau Jo's, the interlocking whole wheat and white crust and honey for the giant chunk o crust at the end. Perfection
