Sorry for the stupid question - those on the outside, do they rotate to go on the inside pitch once completing the 1v1. How does the rotation of players work here?

Great question!
You are correct, the players who completed the 2 vs 2 section will split into each 1 vs 1 section, and each player from both the 1 vs 1 section will come into the middle to run the 2 vs 2 next time. Hope that makes sense, and thanks for asking!
