Or the fact that damage occured to the car, camera caught it, for a car that cannot take damage. Taking jumps is bound for damage.

KR was and still is the best series ever for me. But my question is how did he even jump like that in a hilly curvy roard without going out and falling off track to go down the hill and probably end up in an accident!!

One of the best chases in the whole series. Good editing, the sound effects are excellent, and a few shots are actually nice driving.
It amazes me though how they could do one good driving shot, and one lousy slow one. Nowadays and amateur rally driver without license puts up a better shows than those stuntdrivers back then.
The first guy beat up by Michael Knight had a somewhat comedic role as a sheriff in the 4th season episode Sky Knight.
What a great jump across the creek. I wonder what that dangling cable was by front passenger side tire as seen from the mounted camera.
I think it would be the power cable for that mounted camera.

I can think of one episode where the General Lee's jumped over that same canyon. What's funny is that KITT has jumped that same area quite a few times in the series.

Same one exactly. In Dukes of Hazzard two police cars jump over and have frontal collision by exactly the same tree.
Many Pontiac Transams got totalled in the making of Knight Rider, and looking at this jump this particular car must have been totally written off! Especially when you see bits coming off it during the jump at 2:48 😂

0:15 side windows are down. The bad guy should have just waited for a clear shot through the side windows, and he could have easily take down Michael Knight!
That's because Hasselhoff and stunt team couldn't stand driving a black car while wearing a leather jacket in California, and Air Conditioning was often down in these cars because of stunt damage or rushed repairs.
Samba's cowbells give that extra-punch!

0:08 - Hasselhoff showing off his skills again, while driving a car with 'KITTs handlebar' instead of proper steering wheel. Low speed here alright but using that handlebar must have been difficult. I've seen guys with proper steering wheels crashing their cars when going sideways at that speed.
Sounds like that Trans Am was running on Nitrous for a few moments.
