I didn’t have Collard Greens for the first time until I was 20 and in college. My friend invited many of our friends who did not go home for the holidays- his grandmother opened her house to us and her grandchildren, cooking food that was traditional in her family: there was everything from little hens, to collard greens, and chitterlings. He said that it’s a cultural thing- and I think he’s right. My family is mixed with Mexican, Native, and White- the staples of our household vegetables were potatoes, corn, and onions. More importantly, none of them knew what to do with such a thick leaf....they seriously thought it was for decorating a plate of food
You can mix Kale and Collard greens together.
