      I think the fact that their watching shows they care I think we’re all going to interpret this in our own way but an act of not caring would have been to walk away they stay by the deceased cow IMO to be there for the “friend” being butchered.

      Calling this "respect" of animals only shows how insane the entire livestock industry is. At minimum the killing of all highly sentient animals as a food source should eventually be banned globally as a form of animal crulity. We have plenty of other options to eat today other than the flesh of dead animals.

      Speaking as a former meat eater, meat eaters tell themselves all sorts of fantasy narratives to justify cruelty to animals. The fact is we have all sorts of other foods we can eat without harming highly sentient animals like cows.The sole reason to eat cow is a lack the self-control to change one's diet. Frankly, the entire slaughter industry should be banned as animal abuse... And it will happen one day but it will take a generation less cruel and self-absorbed than our own.

    The other cows didn't even mind eating next to this absolute pro gutting and quartering. Efficient, humane, and necessary. I think we project our own stuff onto animals, thinking we're committing some act of brutality, meanwhile the other cows are thinking "well that was weird. Anyway, onto my delicious hay..."

    I am a former beef slaughterman from Australia and although I used to work in an abattoir I used to do my parents cattle off their farm for them as well. Nothing better than knowing where your meat is coming from and how much care went into the kill

      I use either victory knives from New Zealand or frosts knives from Sweden for slaughtering knives
      Both fantastic knives
      I use Swibo knives for boning out

    In America they field dresser gets $125-$150 per animal processed. A team of 3 will do 20-35 a day. 7 days a week there is an extreme shortage often resulting in Farmers feeding 3-4 weeks past prime. this man has very good knife skills as well as very sharp equipment.

      I wouldn’t mind to do so. I would have to get desensitised to a dead domesticated animal because I just view them differently then non domesticated , but I do enjoy using knives and have a weird sense of pleasure trying to make my knife skills better

    I helped slaughter my first cow this morning. The thing that shocked me was the smell. It's going to hang for 2 weeks then we're going butcher him into cuts and snags.

      @@pablitoperez9109 I was expecting the blood but what shocked me is that when you're skinning the carcass there is a strong odour when you separate the skin from the muscle. It's very distinctive and gets in your hair and clothes. I found when I ate lunch later that day I could actually taste it too.

    Difficult watch for me, I'm not sure how I ended up here! Despite having seen numerous videos of abattoirs that have disturbed me, I am still a meat eater. Seeing this video has rekindled my faith that you can respect the lives of animals and still eat meat. Here's to supporting local farmers!

    It's such a good peaceful way to slaughter an animal, give them a good life , treat them welll then make it quick where they don't suffer. Although sometimes you get attached to them and the day is a bit sad when your processing them after the kill.

    Heart, liver, kidneys, and lung would make great Haggis, and you could use the intestine too! It's traditionally made with Sheep offal but you can really make it with any animal. The biggest manufacturer here in Scotland (MacSween's) uses beef offal in their Haggis. Give it a go!

    Oof, tough video for us non-farmers! Little morbid to have the cows eating next to their dead brethren. But like you said, they don't seem to mind. I love this idea; raising the animals and having someone else do the kill and processing. If you don't mind how much does this cost? Or is the cost offset by receiving only have the kill? Also do you have to line the new offal pit or just add a cap? Thanks for the great video, keep up the hard work! All the best from Michigan, USA.

      It is quite morbid, isn't it? They're fortunate not to be able to really comprehend what's happening. The cost depends what cuts you get, vacuum packing is extra, but it costs around NZ $500 for half the animal to be homekilled and butchered, but this is offset, as you say, by only receiving half (plus $600 for the worth of half the animal if we were to sell it instead). No lining for the offal pit (it all turns into soil), and yep, a cover will go over the offal pit, so we don't fall in!. Thanks for the comment and encouragement :)

      @@danbiss87 nobody builds offal pit anywhere near well. even if it is it doesn't spoil well water as organ matter nor its decomposed by products penetrate soil very well. most of these organs are decomposed very quickly by earthworms, nematodes and bacteria.
      if you build a giant offal pit like at the scale of abattoir then you will start having problems.

    Great vid guys, you know you guys should really consume some of the organ meats, they are the most nutrient dense part of the animal and it is a tremendous benefit to kids growing up. We usually add minced liver and heart/kidney to ragu/Bolognese meals and they don't even know it's there!! Love from Ireland.

      what % of offal to good cuts can you get away with in mince for Bolognese etc without it being detectable in smell or taste?

      @malthus101 I don't have any experience with liver in bolognese, but lungs are fairly inoffensive once boiled. Based on what I know with regards to boiled lungs, I'd say you can probably get away with using around 30 to 40% of the total in lungs.

      @@malthus101 you don't need a lot of say liver to get great benefit from it, it's so nutrient dense, I'd say 5-10% is perfect. Marinade the liver in milk for some hour beforehand makes a great job of it. Also try very low levels and increase over time. It is worth it for kids.

    Thanks for the video - it was very instructive. I'm off this afternoon to slaughter a steer at a ranch this afternoon in a very similar fashion, except I don't have all of the nice equipment and knowhow like your "local professional". I'm sure it won't be as smooth, but at least I will know exactly where my family's meat comes from.

    That was really neat. I liked the end when you are disposing of the pieces in the pit. It looked heavy but hearing you say it was really heavy put some reality to it. i have seen videos with that homekiller/processor before but not like yours. Thank you for putting it together. I'm about to do one of my calves and i needed something exactly like this so see what I was going to get myself into... yah... that stomach part. LOL You had me laughing. People here in the States eat Tripe (the stomach lining) yuck! Usually it's all cleaned and pristine white. I wonder if they would still eat it if they really knew what it really looked like. Thank you again for a VERY informational video.

      Typicall white, only knows steak and ribs. You'll soon learn how to eat roaches. So much food wasted. Go to other countries, they eat those parts put in the pit yet they live longer than you. Typical guy who only knows steak.

    Thank you. This was very educational. Mother Nature made it so that some animals eat other animals. This is as humanely as that can be done. And for meat eaters, it is good to know where our food comes from.

    Back at my old ranch house as a kid I loved how our cattle tasted much more then store bought because we really cared for our cows and as sad as I was to lose a cow We gained enough food to feed 15 or so people! Our cows were spoiled given hugs pets and I loved to brush them or just sit on there back. A well taken care of cow taste good because they were happy and humanly culled.

    Yep, you should have been prepared to deal with the hide before the slaughter. There IS a good market for cow skin rugs.. Or just turn it all into rawhide leather for use around the farm and to be sold in smaller parts to hobby craftsmen via your website or ebay. And it appears you left about 5 lbs of meat in the pit, too. Tounge is tasty. If not for you, feed it to the cat.

    Homesteader and butcher who don't know what to do with some of the best parts of a slaughtered cow; the following parts, once properly cleaned are some of the most delicious parts: the head (delicious tacos de cabeza and tacos de labio) the stomach and feet (menudo soup), and the most expensive part: the tongue (the creme de la creme in tacos).

      They dont have to use it. Hides arent worth anything in aus/nz now as there is so many of em.
      Hooves are not needed to be used in any way here

    Although I can not beef any more due to dietary reasons it was really cool to see how a cow was hunted and then processed in such away and honestly I was more satisfied then interested especially seeing that sharp blade going threw the cow like it was paper

    butcher with great skill! But sad to see much waste. You can learn to tan the leather from the skin using simple ingredients. Also, the feet can be used to make excellent broth, which you can dehydrate and make powders out of. The head also contains a LOT of meat. You should cut it into 4 parts and slow cook it for 5-6 hours, and the meat will simply fall off.

    Thats how it should be done. The animals are greatly respected, treated right, given their freedom, they live so happy. And the killing process is humane too. So much better than how braindead people and factories do. Never buy meat from any factory or industries. Only local butchers who make sure treat the animals right. And if the animal lived happy the meat is better and have more nutrients whereas if you buy a emotionally distressed meat, their emotional distress would come to you too.

    I watched the process of slaughtering a cow from Bangladesh and as I did so, I found myself having great respect for the people and their process.
    I think seeing it in it's raw, human, outdoor form helps me see this process in a more natural, intimate form, than a slightly removed slaughter house. At least for me now.
    So why is a suburban city gal watching animal slaughter videos at 1 in the morning, you might ask? Because if my parents or my future husband (whoever he is), wants to be independent and a homesteader, then I want to be able to mentally process this now.
    I realize that having the addition of smell is going to be different, but if I can see the connection between my food and the source behind it, I will appreciate my food that much more! In addition, if and when I ever come across this type of situation, I will be that much more ahead of the game to accept the practical, yet sacred process God has provided for his children.

      Better this way than a slaughterhouse. Here they get wide open space and comfortable conditions before the end, instead of cold metal and cramped cages.

      I used to hate it too until I started raising my own meat. Knowing the animals had excellent lives, got lots of love, died with dignity makes it much more acceptable. Also, the meat tastes 100x better.

    im cassualy watching ethical slaughters to mentally make peace with farmers and meat eaters, i've already watched a few that i find good, and i was hoping by the comments in this video this would be another one. Unfortunately i had to stop the video the moment you shot that cow in front o the other cows. I dont understand how no one find that horrifying.

      It's a shot on the head, a quick kill as the cow doesn't get to witness or feel any pain from being killed unlike other videos where cows get tied up tightly while still breathing and get knocked on the head a couple of times by a wood to render it unconscious in which 50%of the time it's still conscious and feels immense pain.

Yes im questioning the little sensibility in killing and cutting the animals in front of the herd. You can say whatever but cows are sensible mammals. Human communication is not the only one that exists in this planet. its so easy to put some nice music in front of cows watching a butching and say "look ,they are just fine"

      I Kind of understand what you mean. at 5:13 they show to have slaughtered the cow. by 5:34 all the rest go back to eating and seem to leave the rest to luck of the draw. Like in nature, whether we are the predators or something else; they understand that one of their own gave their life so that the rest can survive. At least that is the way that I choose to see it.

    Things are better than in many other slaughter houses but there still was a MAJOR thing wrong, that was slaughtering the cow in front of other cows. Those animals do very well know and understand when one of them is hunted/killed especially if it was in front of them. That is why buffalos and other prey run away from lions/tigers etc.

    Those skilled internal cuts would have been nice to see closer as this is why I wanted to watch this video in the first place. None-the-less, I did learn about the killing and skinning process which was quite nice. AAAAHHHHH NOOOO, Threw away the hide and the head and the liver and the brain for tanning good golly miss Molly And not to mention wasting the blood at the beginning. All in all nice starter video for me to learn basics of butchering quarters of a whole cow. Thank you.

    17:53 OMG you don't eat the guts in the US? Here in France it gives a quite expansive meal we call "tripes" which translates to "guts".
    Now you're gonna say that since we eat stinking cheese and snails (less than 20% of the population for those) and frogs (barely noone anymore) my critique doesn't count. But trust me, this is really good with the proper cooking and seasoning.
    Great video by the way, you give a lesson to the world on how an animal should be raised and killed properly.

    Wow you do not eat heart and liver?
    Liver is good fresh fried with onions and cream or made into pate´with carrots and brandy.
    Heart i like boiled in saltwater. It has different texture and good as just meat slices for sandwiches.
    Tongue boiled and peeled is tastiest. It just melts in mouth when warm.
    Grandfather used to like also brains. He left brains simmering in metal bowl on wood stove. just sprinkled with salt and some pepper. It tasted very fatty and soft.
    Also lungs and kidneys were cleaned, boiled and made into pies.

      @@BacktotheLand I'm watching this in hopes of doing the same and wanting all parts for future use. Bones - broth, Fat - Tallow, Brains, Spinal Cord (may come with cuts of meat though), Spleen, Stomach, intestines for casing, etc., etc. I've only had heart and liver but want to try more. FWIW, I'm in the US. Liver and bones are quite easy now but all else is a little harder to find.

    I am a very passionate meat eating bodybuilder and I love beef so much and agree with the slaughter of animals for meat but I have to say as much as this whole thing made me hungry for a burger the part where the cow was just dead and its face was empty was a little bit saddening. But I suppose the concept of death just is anyway.

    Im a meat cutter and I can say that the head and the stomach and the pelt should’ve been saved they seriously threw away good meat such as the cheek meat, tongue,brains, and the menudo you get from the stomach

    Nothing wrong with butchering a cow whatsoever, however, you could've done this somewhere else. There is never anything to lose with just being humane. No need to butcher a cow right where the herd is.

      Think in the wild where the prey are sometimes grazing, but then the predator who had their fill for the day are watching their fellow animal be consumed by another. This to an animal is typical nature.

      Secondly, you can't be bringing up nature with domesticated animals.
      Thirdly, this farmer should've shown you the video of how cows respond once they get near where a member of their herd was butchered. They can tell and they respond.
