  • Step-by-step process to make Chicken Pulao:
    1. **Preparation**:
    - Soak the rice in water for about 30 minutes before cooking.
    - Cut chicken into pieces as per your preference.
    2. **Cooking**:
    - **Step 1**: In a large, heavy-bottomed pan (preferably a hard pan), heat 2 tablespoons of ghee on medium flame.
    - **Step 2**: Add whole spices: elachi (cardamom), cinnamon sticks, cloves, shajeera (caraway seeds), and bay leaves. Sauté these spices for a minute until they start to release their aroma.
    - **Step 3**: Add chopped green chillies and sliced onions to the pan. Sauté until the onions turn golden brown.
    - **Step 4**: Once the onions are browned, add ginger garlic paste. Stir and cook for a couple of minutes.
    - **Step 5**: Add the chicken pieces to the pan. Cook on a medium flame, stirring occasionally, until the chicken starts to brown.
    - **Step 6**: Season with salt to taste. Continue to cook the chicken for about 5 minutes, ensuring it's well-coated with the spices.
    - **Step 7**: Drain the pre-soaked rice and add it to the pan. Stir gently to mix it with the chicken and spices.
    - **Step 8**: Add water to the pan. The general rule is to add double the volume of water to the rice. For example, if you use 2 cups of rice, add 4 cups of water.
    - **Step 9**: Bring the mixture to a boil, then reduce the heat to medium. Let it cook until the rice is about half done.
    - **Step 10**: Add chopped coriander (cilantro) and pudina (mint) leaves. Stir gently to distribute them throughout the rice.
    - **Step 11**: Continue cooking on medium flame until the rice is fully cooked and all the water is absorbed. Be careful not to stir too much as this can break the rice grains.
    3. **Serving**:
    - Once the rice is cooked and fluffy, turn off the heat. Let the pulao sit for a few minutes.
    - Fluff the rice gently with a fork before serving.
    - Serve the Chicken Pulao hot, garnished with additional coriander leaves if desired.
