    We don't sell eggs or chickens, but we raise our own food.
    We switched over to American Bresse last year and have done several comparisons on the meat quality.
    The breast meat of the Bresse is definitely better than the Cornish Cross. More tender, more flavorful. The breasts are slightly smaller. The leg quarters on the Bresse are not as good as the Cross. That's really an unfair comparison as all we've processed on Bresse have been roosters. We have 20 chicks at around 6 weeks now so we will have a better comparison soon.
    I'm really leaning towards doing what you plan. Going back to sex-link for eggs and just doing 50 Cross 1-2x per year. The Cross are more labor intensive but only for 7 weeks or so. If there's no real improvement in the quality of meat then they make more sense.
    I understand the sustainability issue with hybrids and don't disagree, but that's really not my main concern.
    No piglet shots? We just raise a couple of feeder pigs every year for our use and shoot 2-3 deer for our red meat. We have been doing this for a while and used to grow some beef cows, but they just take too long and require too much pasture for our needs.
