-Selling like hot cakes: "va via come il pane"

To ring a bell -> mi ricorda qualcosa (there is not a specific idiomatic way, at least at the best of my knowledge)
To play it by ear -> ci inventiamo qualcosa, improvvisiamo
Selling like hot cakes' -> si vendono come il pane
So, that's my two cents opinion.
