Shame it's so invasive, i generally like iguanas because they can be quite friendly and fun to mess with. But sadly all it takes is people introducing something to an area they shouldn't and it ruins an ecosystem. Hopefully people start going for them like they do lionfish and boars and people who own them as pets don't release them in the wild.

You need to try and curry it. Here in Trinidad in the Caribbean. We hunt them as wild meat, it’s a popular dish to serve them curried in the Caribbean traditional style. Not to be confused with East Indian curry, our style is West Indian, it’s truly amazing

You should try to cook this Filipino style. In the Philippines once in a while, people catch bayawak (monitor lizard) and cook it in coconut milk, ginger, garlic, bay leaf, pepper, whole red pepper, soy sauce, and salt. It is also usually left for a couple of hours on low heat to simmer and get the meat nice and tender. Traditionally we also cook it skin on. This recipe is called "Adobong Gata" works with chicken, fish, duck, sneak, and I guess any meat you're willing to try.

According to Iguana Man, you MUST cook it with the skin on, or you will get iguana jerkey every single time. The skin holds of course,, whatever moisture they have in. If not, all you can do is dry it out.

As someone from Brazil seeing these animals being killed hurts me a bit for the symbol for conservation they represent here. To see an animal like that near an urban area here is a gift for me. But he is right about killing them in America. I don't think that hunting them will ever get the population there to the verge of extinction, since the farms are always providing food to these pests, but at least the farmers always have something available to eat and they are keeping the native species thriving.

I had a 6 1/2 iguana that lived free in my house and was fully potty trained...I put rolls of fabric on a cat perch and his hear lamp above it...He would come down each day and scratch the back door to go out...Spend a couple hours in thye back yard and then scratch to come back in...After that would normally lay on my chest on the couch for a bit to get some love and then back up to his perch...He only ate a small bowl of lettuce and some hiabiscus leaves and flowers in the yard...Not sure how they could do so much damage down south...Ziggy was as sweet as could be and lived for 33 years...He even loved sitting on the dash in my van and going for a ride...He was awesome...To bad this has happened...

I’d rather just kill them. I live in south Florida and those Godzilla like lizards take a dump around my pool all the time and it is nasty as hell. Almost as big as dog crap. If you seen what came out of them you wouldn’t want to eat those vile creatures.

Some parts of Mexico it's even illegal to kill iguanas due to so much they've killed... I think they have to do it season now.

I'd love to try this out with my 10/22, 3x7 Bushnell sporter on it.
In P.R. we wash the meat and then apply lemon or lime juice. The pressure cook the meat to tenderize because otherwise, it tends to be on the tough side.
