Don't use granulated sugar. Use sugar in liquid form (i.e. simple syrup, condensed milk) so that the ice cream can be easily scooped after being frozen.
To make it Keto/Low Carb exchange the sugar for Lakanto Monk Fruit Sweetener (or other Sugar Substitute of your choice). Tastes just as good! You can also use other extracts to switch of the flavor the of the ice cream.

Oh definitely. The vanilla acts like a base and you can build off it. You can use other extract too. My wife is partial to strawberry so I use strawberry extract and crushed graham cracker for a sort of strawberry cheesecake thing

I made it. It was not "creamy" at all, but rather more of an Ice flaky texture. There was a sound when I chewed it. I'm a pretty good shaker as well, and needed to shake for 7 minutes. No idea how he did it in 2 minutes.

I tried it once and it worked well. The second attempt, I used condensed milk instead of sugar and added a crushed candy cane. Awesome!

Simple syrup is great for this to avoid the granulation. So is confectioners sugar.
