Hi Stacey, Just to let you know that I made this over the weekend. I used freshly squeezed lime juice (because my friend has a tree) and left out the oregano. Delicious recipe and even better - like you suggest- with chopped cilantro just before serving. How long would it keep in the fridge as I didn’t use bottled lime juice? Although, I don’t think I need to worry; we’re going through it so fast😂 Thanks for another versatile recipe

Regarding storage in the refrigerator, fresh salsa lasts anywhere from 3 to 5 days. It could last a little bit longer, but that’s pretty much it as all the vegetables are fresh and will start to go bad. You can add the cilantro and leave it in there if you’re just storing it in the refrigerator. I just don’t suggest using such a soft leaf herb like cilantro when pressure canning or waterbath canning or even cooking with it to be honest. I think fresh cilantro needs to be used right before serving. It breaks down too much in the cooking process. Glad this worked out for you. Happy Canning!
