  • These Buttery Pecan Snowball Cookies are one of my family's favorite Christmas cookie recipe. Easy, quick to make, delicious, and they freeze well. These rich, sandy-textured adorable Pecan Cookies know as polvorones or mexican wedding cookies are the perfect neighbors or friends gift for the holidays.
    Makes 20-24 cookies
    INGREDIENTS
    1 cup unsalted butter, softened
    ½ cup powdered sugar
    1 teaspoon pure vanilla extract
    ¼ teaspoon salt
    2 ½ cups all-purpose flour, sifted
    1 cup finely chopped pecans
    1 cup powdered sugar for dusting
    PREPARATION
    1. Preheat oven to 360°F/180°С.
    2. Cream butter and sugar in medium bowl until creamy. Add vanilla and salt; beat until well mixed.
    3. Add the sifted flour and chopped pecans; beat at low speed, scraping bowl occasionally, until well mixed.
    4. Shape dough into 1-inch balls. Place 1 inch apart onto ungreased cookie sheets. Bake 16-18 minutes or until very lightly browned.
    5. Cool 5 minutes; roll in powdered sugar while still warm and again when cool.
