You can make script that spawn horse with rider instantly (I used on 1.16.5 such a script), without scripts there is no other way than spawning horses and mounting riders one by one. Anyway, I don't have scripting experience, so I have no idea how to write that script.
I don't use any replay mod in my videos. In minecraft settings--> controls you can find something called "cinematic camera", it probably doesn't have assigned key, with this you can get smooth camera when you click right button. Additionally I use some tricks to get more cinematic shots. For example on 1.7.10 when you press space and shift at the same time (when flying on the creative mode) your flying speed decreases, by blocking with sword you can decrease speed of flying ever more. Later in the editing software/montage program I adjust colors and I add special effects to improve my videos. I don't know if I make tutorial about it.
If the player would kill Rider first, Horse will attack on it's own which is not really immersive (not that minecraft can be immersive, but you get the point). Would it be a possible to make Horse die when Rider would be killed?
