To me I went with the rolled brass tone-ring on my Pisgah because I thought it sounded like it had the most depth. The Dobson was a bit more focused with more pop definately. Either way there are lots of things you can do with banjos to control and change the sound somewhat. Once I finally get my banjo down here to Argentina, I will be able to take in the whole sound of the instrument and will review it on the BHO.
If you play the persimmon model before there is a frost...does you mouth pucker up? Sorry...

one can only tell so much from the video, how would you say the tones compare?
the rolled brass sounds the most bright and jangley, more bluegassy than the others, while the possum seems to be more of a mid heavy tone, almost minstrel like.... more like a tack head.
and the dobson sounds like a nice blend of the two.
Love your banjos! I'm building my war chest for one of them right now...
Of course I chose the Cherry rim...( according to my research ) Cherry is a bit darker and plunkier so that was my idea to go with the simple rolled brass...to balance it all out...but of course I wont be able to know the individual voice of my banjo until I actually play it...its exciting...like opening a gift,it will be interesting to hear how the sum of all the parts work together on my particular Pisgah and the individual voice that it has.
I always find it hard to describe subtle differences in timbre of our instruments. I would say the brass tone ring of the Appalachian model sounds the brightest, the persimmon tone-ring on the Possum has a mellow plunkier sound, while the Dobson has a slightly brighter, punchy plunk. It's hard to hear all the nuances on this video, we hope to post some hi-fi recordings on our site soon.
What's the scale length of the banjo you played?

My favorite banjo player Claire Childress ( th-cam.com/channels/FPOYcWXL_sFadn7IqPsDcg.html ) mentioned she plays a 12" Possum Pisgah so I had to check them out. My playing is not good enough to justify purchasing one yet, but hopefully someday.
